Cheezy Califlower Nuggets

I made these: They are an excellent tasting protein stack!!!
Ingredients
1 small head cauliflower (or, I use 1/2 pkg of GREEN GIANT'S, Cauliflower Crumbles for less money and easier. They have just pkg. of florets too)
2 eggs, beaten
1/2 cup breadcrumbs (Just blend your gluten bread in blender i.e.) (Some breads have to much sodium. adjustment when needed.)
1 tsp dried parsley
1 tsp garlic powder
1/2 tsp salt.
1 cup shredded cheddar cheese (Veggie cheese?)
3/4 cup shredded mozzarella cheese
(2 Tbs coconut oil if needed for weight loss) optional

Original recipe makes 8 Servings
Ready in 45 minutes

Preparation

1. Preheat the oven to 350 F. Line a cookie sheet with parchment paper.
2. Stem and chop your cauliflower into florets. Cook or steam them until
they ’re just tender. Strain them from the water and squeeze out as much of their
liquid as humanly possible. You can also use bounty paper towels. Then, chop up
the florets. (not necessary to steam if you use the tiny "crumbles")
3. In a large bowl, combine all of the ingredients. you may have to add some
more breadcrumbs if when cooked there is still liquid left and they are unmanageable. Form
them into nuggets by pressing them together as much as you can, and place them
on the baking sheet. (brown in oven)
Don't burn, let them cool and package them for snacks in fridge.

Please note that you can also cook them in a pan with a drizzle of olive oil.




Not vegan but vegetarian
I added coconut oil in the batter, for weight loss
Do not over cook, and account for the salt in the crumbs of bread.
