7 LAYER PASTA SALAD

Saw this on TV and decided to try it. I did change it a bit for vegetarian, taking out the ham.

7 Layer Pasta Salad

recipe recipes
  • 3 cups medium pasta shells, cooked, drained
  • 1 red onion, sliced
  • 1 pkg. (10 oz.) frozen peas or edamame, thawed, drained
  • 6 oz. cooked ham, chopped or boil egg, (veg. frozen sausage), tofu, tempra i.e.
  • 1/2 cup mayonnaise
  • 1/2 cup ranch or blue cheese dressing
  • 1 cup cheddar cheese, crumbled
  • 1 cup tomatoes, diced
  • Salt, favorite herbs and/or Pepper, to taste
Layer the first 4 ingredients in clear 3-qt. serving bowl. Mix mayo, dressing, salt and pepper; spread over salad, sealing to edge of bowl. Top with cheese and tomatoes.
Refrigerate for at least two hours or until chilled. Toss gently before serving.

Tofu Tocos, or Vegetarian Tocos

Basic Tofu Tacos
INGREDIENTS:
-1 block extra firm tofu
-1/2 a white or yellow onion, chopped (about a cup) or, shredded sm. zuke
-1/2 a bell pepper, chopped (about a cup)
-1 cup kale, leaves pulled off tough stem in chunks
-1.4 oz packet taco seasoning (watch out for animal products)or, try veg. chili beans.
-10 corn tortillas
-2 tablespoons oil, divided
Your favorite taco toppings I used:
-Shredded lettuce &; cabbage
-Salsa
-Tofutti sour cream
-Diced tomatoes
 fresh salsa

DIRECTIONS:
Prepare veggies and toppings, no need to press the tofu, just drain it.

Heat 1 tablespoon of oil in a hot wok or other large non-stick pan. Take your block of tofu and crumble it into the pan. Fry the tofu until it begins to turn golden, stirring occasionally.

Once tofu begins to turn golden, add the bell peppers,onions, and the other tablespoon of oil (if you need it). Continue to cook until bell peppers and onions are soft, stirring occasionally.

Add kale and taco seasoning (no need to add water or anything), mix until all the tofu and veggies are evenly coated and kale is wilted. Take off heat.


Heat your tortillas however you chose, add taco filling and toppings, enjoy!
*Tempra strips (morning star has some flavored one too), in packages at health food stores or steitan (gluten) can be use in place of tofu as a me stat substitute.

Making Vegetarian Hamburger

Meat Substitute found in all grocery's. All vegan know how to use seitan in meals. Some just buy the non flavored box in health food stores and add flavorings. It's actually cheaper to make your own. It's nice if you have a bread maker to mix the flour and water to develop the gluten faster. ( Steitan_gluten (8) posts) http://shermsrecipes.blogspot.com/2011/12/vegetarian-tocos.html
Every one should know how to make TVP (or gluten/seitan.) This is a hand version of making this protein from flour. It can be started in a machine. Here is basic knowledge extracting the protein gluten by washing the whole-wheat flour because of the fibers of its bran etc. (other flours will work) then converting gluten to TVP meat substitute. You can make up a smaller amounts once you get the idea and will not even need a method recipe. By the way, you can find the subject on YouTube.
Different varieties of whole wheat have more gluten than others. Hard winter wheat generally has more gluten in it, yet not necessary. (No GMO) Please make sure it's organically grown and not genetically altered and so will it food value, more non allergenic, and taste better. The advantages of making it in your kitchen are your in control of leaving some fiber in, it so much tastier and a better product. Commercial gluten sold in Health Food sections of groceries and health food stores lacks the starch, minerals, vitamin bran and the wheat germ. Their are many methods of making seitan....and recipes. Check YouTube for more ideas to you likings.

FACTS: A cup of raw gluten has 72 g of protein compared to 8.9 grams in milk, 10 g in TVP, 6 g in one egg, 7 g. in one oz. Hamburger patty and in 1½ cups of cooked beans only has 7 g. You can see it’s well worth any effort to process.
12 cup of whole-wheat flour makes into 4 cups raw gluten. 4 cups raw gluten bakes into 9 cups ground gluten (299 g protein) and 9 cups ground gluten cooked is equivalent to 4 pounds of hamburger (325 g protein)

Hand Method
Mix in a bowl
3 cups cool water
7 cups whole-wheat flour
Note: you could use an electric; bread maker, bread mixer, beater to a point and then knead for about 5 minutes. i.e. Let rest in a ball for at least 15 minutes; in water for 15-30.
Extract (wash) the whole wheat starch, bran under water. When the water becomes less white...your through.
This method is the most satisfactory and very easy. You can do three times as much as the other methods, with very minimum loss of gluten. This hand method will yield 4-6 cups of raw gluten.

You’ll need:
Running water (cool) to wash away the starch, and bran. This washes the dough with water. You are separating the water-soluble starch from the gluten.
Colander (plastic or metal not a screen strainer to catch loose gluten and to allow some of the bran to go through.
Bowl to save the bran.
1. Cover dough with water in bowl in which you have mixed the gluten. Work dough with your hands to loosen it a bit keeping it together in a ball so you don’t loose it. (This is not necessary when gluten has been worked up with portable electric beaters.)
2. With the bowl or plate under the colander, place as much dough as you feel you can work with in the colander and hold under cool medium tap pressure.
3. Work dough with your hands until it becomes a tough (like bubble gum), elastic-like texture and the water from the gluten comes out fairly clear. You will see specks of bran. Don't expect to get it out completely. (At this stage faster speed with the tap water will take more out more bran if your not interest in saving any.)
Repeat this procedure until the gluten has developed and is out 4-5 washings.
BRAN: As the plate gets fills with ban, carefully pour of excess water. You will probably only need to pour off excess water 2-3 times.
Pour bran into container. Store it in refrigerator. It will keep in the raw stage at least one week. It can be dried too and put in compost.
Let the bran settle first then pour off the liquid. It may be necessary to have thick bran for recipes, so plan here.
Note: You can also save the starch water. When the water gets milky, thicker, and you can see bits of brown bran, pour liquid off into a bowl or jar. The properties of the starch water have nearly all the vitamins and starch from the wheat. Use this for thickenings, gravies, stews, soups, water for plants and even baths and lotions. Bran is cellulose, which means it is roughage. It aids in the muscular action of the digestive tract, thus producing normal elimination. Bran is a natural source of trace minerals and important in the balance of the body digestive system. It's high in phosphorus and potassium.
Cooking with Gluten:
This will make meatballs, patties, tacos, chili, sloppy Joe's, sausages, etc., in casseroles and deserts. More of this will be in the next entry.
And if you’re in a hurry, just buy the gluten flour in stores and do one of the gluten recipes. Instead of adding water to the gluten flour add broths and etc. to flavor.
2. Cooking methods for a ground meat texture
1. Place raw gluten on lightly oiled or greased cookie sheet (It will stick to pan.) Push from the center out and stretch on pan until gluten is fairly even. (Around 1/2'' thick)(Note: this process can be done on top of the stove boiling it in broths).

2. Preheat oven at 350 and bake 15 minutes. By this time it will bubble up somewhat. Twist fork in bubbles and thick-raised areas so as to let out the steam. Cook thoroughly for another 15 minutes. Or until it springs back when you press it.
3. When there are no crisp areas, (and cooled) you can run it through a food chopper or meat grinder on the medium disk, or grate on any shredder (largest holes, or in food chopper, till the gluten takes on a ground meat texture. This can be stored in the refrigerator or freezer. It thaws very quickly. To make meat (gluten) balls some may prefer gluten done on the larger disk.
The ground gluten is use in making: meatballs, patties, and sausages, in casseroles and in some desserts. It also can be an extender or stretch hamburgers etc.
Gluten Steaks, Roast and Strips A Cooking Method For Gluten Steaks
RE: Do the “gluten method” for making the gluten for this steak, roast and strips recipe.
Bake 1-2 cups raw gluten in a greased tin can such as (can stews cans) about 4" diameter or No. 2 1/2 size. This is important if you want a definite meat-like texture for these steaks. It's not necessary if you don't care for a more uniform look as seen below.
These definite steaks three factors are determine by:
1. +Gluten needs to be baked in large can (small cans let it raise too much, giving it a bread-like texture).
+ Gluten needs to be pounded out, but not washed out too much.
+Baked this at a low heat.
2. Place gluten slices in boiling broth. The liquid should just barely cover the gluten. Simmer 30 minutes to an hour. The broth should be almost gone. Press out as much liquid as possible either with spoon, through a strainer, or blot with paper towel. Place the gluten steaks on cookie sheet and in a 300-degree oven to dry out for about 30 minutes. After they have been in 15 minutes, turn them over. At this point, pound the steak with a meat tenderizer hammer (not so hard they fall apart) for cubed steaks if desired.
3. Dip steaks in beaten egg, evaporated milk (or just milk) or mono oil and "bread" in cracker, breadcrumbs, flour, or favorite shake and bake mix. (Flavor here) Then fry in mono oiled pan until browned on both sides and serve with gravy or sauce.

Chops
Roast Method No 2
First Do the “Gluten Method” (the directions is in this blog)
Then, covering the balls of raw gluten with the beef-flavored liquids to cover. Cover pan with lid and let simmer 8 hours. Be sure it doesn't run dry! This method develops a beef roast-like texture. This can be done on top of the stove or in a 250-oven overnight. This is best served by slicing thin and topping with gravy.
Cooking Methods For Gluten Cubes and Strips
Roll out raw gluten with rolling pin: 1/2" thick for cubes: 1/4" thick for strips. Cut into cubes or strips with scissors. Drop gluten pieces into boiling flavored sauce. This enables the gluten to absorb flavor and hold their shape. Simmer 30 minutes. They will be spongy so you will need to dry them out before serving. Press out liquid and place in 300 oven for 30 minutes or until firm and chewy.
Ideas:
*Place a heavy heat-resistant weight on top of gluten pieces or roast when boiling. The dough tends to float and will not absorb all the liquids evenly.
*Many good stocks are in the health food sections of grocery markets and health food stores.
*Giving gluten a beef flavor: For every 1-2 cups ground gluten add 1 TBS beef seasoning, or 10-15 beef broth cubes.
*Vegetarian Ideas: For every 2 cups liquid add 1 tsp. soy sauce, OR: 1 TB Worcestershire sauce, or 1 tsp. Kitchen Bouquet or i.e. and 1 tsp. raw mono oil such as olive oil. The water ratio is usually 1/2 and 1/2...
Or, For every 2 Cups ground gluten + 4 cups liquid: Add Schilling’s Beef Stew Mix & Mushroom 1/2 package, Lipton Onion Soup Mix 1 package. Schilling’s Beef Base 2 - 4 TBS, Bouillon Cubes 2 (powder them), Wyler's Chicken Soup Base 4 TB and Colgins' Hickory Liquid Smoke 4 oz. (it give a barbecue flavor) and there are many other flavors.

VEGETARIAN MEAT-LOAF

I'm beginning to like some of the Dr. Oz show and this recipe came from one of his shows. I've used my ground up gluten, but this "vegetarian burger" is quicker. (Morning Star carries gluten strips that could be used and ground down in a food chopper, however, they've had all the brand removed that's preferred for good texture and taste.)
(2 Tbs Worcestershire sauce, 2 Tbs liquid smoke (or to taste) Variations: 1/3 c finely chopped bell pepper (any color) 2 c veggie broth Salt and pepper to taste are ingredients that could be substitute for the items you don't care for.)Loaf Ingredients;VEGETARIAN MEAT LOAF
Ingredients
1 (12 oz.) bottle barbecue sauce (high quality, AND tasty) (or, Worcestershire/liquid smoke)
1 (12 oz.) package vegetarian burger crumbles (or, grind up 12 oz of one of my "steitan" recipe found in this blog)
1 green bell pepper, chopped
1/3 cup minced onion
1 clove garlic, minced
1/2 cup whole wheat bread crumbs or, wheat berry (see below)
3 tbsp Parmesan cheese (sub. from variation's for other flavors if cheese is a problem, Vegan's)
1 egg, beaten (See sub. eggs post for vegan's)
1/4 tsp dried thyme (sage can be sub.)
1/4 tsp dried basil
1/4 tsp parsley flakes
Salt and pepper to taste
Directions
Preheat oven to 325° F. Lightly grease a 5x9 inch loaf pan. In a bowl, mix 1/2 the barbecue sauce with the vegetarian burger crumbles, green bell pepper, onion, garlic, bread crumbs, Parmesan cheese and egg. Season with herbs; thyme, basil, parsley, salt and pepper. Transfer to the loaf pan.
Bake for 45 minutes in the preheated oven. Pour remaining barbecue sauce over the loaf, and continue baking 15 minutes, or until loaf is set by cooling it down a bit to keep it together and firm.
Just keep it simple, flavorful and easy.
Add a mushroom gravy etc. for a semi home made meal

*Or,add; use some of this Wheat Berrie Mixture recipe.
2/3 c wheat berries cooked over night in crock pot for 1.5 hours. Cool and mix 1/2 bread & mixture or 1/2 cup Wheat Berrie...Freeze for recipes and/or the rest for another recipe.

SEMI-HOME-MADE SEITAN (meat substitute) Vegan

Today meats are too costly, full of antibiotic (antibiotic are man's-grown parasites), chemicals, hormones etc. and way down the food chain to good nutritional values. Meat stops the elimination of diseases (see post) and, people eat too much of it to clear the body of toxins. Toxic body is a sick body. Organic gluten or Seitan can substitute the value of meat and is better made at home with the bran left in. (See posts.) However, this is a quicker, semi-homemade recipe that needs to be in my recipes with the other seitan's.
Seitan (vegan)
12 cups water
1/8 cup maple syrup
¼ cups water
1/8 cup Bragg Liquid aminos (Non Vegan style would to just use beef, chicken or veg. broth.)

1 ¼ cups organically grown gluten flour
¾ tbs. Garlic powder
¾ tbs. Onion powder
½ tbs. Basil or sub. another spice (see below)
1 tbs. Chicken-flavored broth base (found in health food stores)

Place the water and the maple syrup in a large saucepan and bring to a boil. Mix the next group of ingredients in a mixing bowl. Combine the water and the Bragg's and pour into the dry ingredients. This will form into a wet dough.
Knead the dough for five minutes trying to get the air bubbles out. Tear into lemon-sized pieces and place in the boiling water. Boil for approximately 45 minutes. Remove, cool, and drain in a colander. (Can be frozen)
NOTE: You can save the white... (starch) from gluten making for any gluton free cooking, cookies, noodles etc. if it was started from the whole wheat flour. See seitan posts.
Next, be careful not to follow "any fad," including "gluton free" anything. These products are not in its whole original form, that the first clue, it's white, no protein in any product made from the flour, and has is not calorie free.

Variation; For sausage flavored seitan, make the following changes to the above recipe: Substitute beef-flavored broth base for chicken-flavored broth base i.e.
Add:
2 Tbs. Thyme
2 Tbs. Sage
2 Tbs fennel or sausage seasoning.

VEGETARIAN BACON (HOMEMADE)

Making Vegetarian Bacon
It’s a great meat substitute for some of us who are making a vegetarian transition, or who want to eat less meat. It make up beautifully to BLT sandwich, breakfast sandwich, wraps, pizzas, Reuben sandwiches (toasted with rye bread, vegetarian soy cheese, sauerkraut and dressing.) Toppings for soups, and salads there is no ends for this Vegetarian Bacon recipe. It’s fun, cheap and easy to make and yummy. Make a lot up to a specified point and freeze it. The better you get at the method, freeze it by not frying it all the way and do double batches later.
MAKING VEGETARIAN BACON METHOD
1 lb extra firm Tofu
2 Tb. low sodium Tamari shoyu and/or a light soy sauce
½ tsp. Liquid smoke (optional, and more or less)
2 Tb. mono oil to fry in (raw cold press lighter style of oil)
Ground Pepper (optional)
Other options: Maple Syrup, black strap molasses, sugar, Nutritional Yeast, wheat germ, Kitchen Bouquet (a seasoning sauce), hot sauce or garlic oil, with smoked jalapeno, i.e.

Fry long tofu strips on medium heat until they are crispy on the outside. Lay them in a cast iron pan soaking by letting them set in the hot oil for about 10 minutes and summer turning over and for another 10 minutes.
Aside: First mix the tamari/shoyu soy sauce, or just soy sauce, with the liquid smoke. Take the pan off the heat, pour the liquid smoke - tamari into the pan, stir the tofu on all sides, and coated, then sprinkle the yeast over the bacon strips. Turn over tofu, keeping pan moving over heat until the liquid is gone and the tofu is covered with sticky yeast.

Try it! It taste LIKE bacon. The over salty taste has to be adjusted to your tastes!
Don’t buy the foil lined container (tofu.) The extra firm sometimes comes in tubs. Press and drain the tofu 30-45 minutes before frying. Cut the tofu into ¼ inch (or less) strips. Making sure the cast iron pan is hot on medium high heat before adding the tofu and then fry. At the end add diluted liquid smoke or/and soy sauce turn the heat down to low so it will not burn.

Lay strips in a cast iron skillet in and fry until golden brown about 25-20 minutes on each side. Gets the water out. (About 45 minutes total) Be sure to watch closely, it will turn dark fast when it approaches the golden brown color for that nice crispy “bacon like” crunch. If you shake the pan occasionally so it will not stick. When turning it over cooking on other side the last 20 minutes it will cook faster. You need not to cook it till chrispy for bacon and tomato sandwiches?

Marinate: (Some freeze the tofu to get more water out then drain and dry?
Drain and dry the tofu first then Marinate the tofu strips in the mixture of tamari/liquid smoke before cooking instead of adding it to the pan afterwards it’s less salty. Or it might consist of, Soy sauce, liquid smoke and a small amount of maple syrup soaked with the tofu overnight) (You’ll make your own style to suit your palette so experiment many ways. Some say it may miss a little in a bacon flavor without the Nutritional Yeast. (It makes it more salty) Bacon is salty and fat.

Optional_TIPS: It stores well in the fridge. You may have to adjust by adding water to the liquid smoke or, not at all depends on your palate. Start the bacon (tofu) on the stove top browning and crisping it up, then finish in a 350 degrees oven for cooking, adding in the marinade.
Use unsalted soup stock to dilute Tamara or in its place, use Liquid Aminos (Braggs). Some will not like the yeast flavor ("Kal" in a yellow green can) others swear it tastes more like bacon. Add a little water to cut the salt taste in using regular soy, Tamari, and or such. Nutritional Yeast is not the same as Brewers Yeast (residue from beer.) Some may need to stay away from the "yeast" idea.
You'll learn the more you do this. Some may want it very crispy or need a bend in it. A cast iron skillet is nice to work with. Remember your basically frying the liquid out of the soy and can really even add the seasonings in the last minutes of the desired texture you desire. The baking style of cooking this ups is below for those who want to bake the flavors in.
I like soy (watch this it can burn fast) or Bragg’s Liquid Amino's with all its natural B’s. Just try a bit before adding any yeast. Experiment till you find your flavor style and method.
If you cut top to bottom on the short side of the tofu, it will end up with about 15 three-inch strips. Try using the gluten method (in this book) "seitan." to make up this bacon.
Try baking it for those who are into the “no oil fads” remember pigs are fat, and so is bacon that’s why so good. It needs oil.
Cautions do not use non-stick Teflon pans. The EPA has just recently declared the pans as a hazard because they cause tumors in rats.
Freeze tofu for extra texture. Add garlic, onion powder, i.e., pineapple juice and dehydrate for vegetarian jerky. Try doing the slices thicker, longer cooking time at lower temperatures for using in different vegetarian recipes. This recipe is more a "method" than recipe, and a lot of this recipe is ideas that I've experiment with, you don't have to do it all.

Hey...Sometimes we want bacon and not pork and time on our hands. Just be patient. This may seems to be superior to vegetable bacon, certainly less chemical. *For a meat look try painting on very little beet juice color, if you’re creative.

Vegan "Bacon" Oven method (From reader) She doesn't like so much fat?
Block of firm smoked tofu sunflower oil for brushing shoyu/soy sauce or similar maple syrup nutritional yeast flakes This isn't an exact science and boils down more to personal taste, but this makes a crispy substitute that is better than any shop bought fake
bacon I have tried:
Use a peeler to make wafer thin slices of tofu (sliding it from side to side as it is drawn down the tofu block helps) Lightly brush each side of the tofu wafer slices with sunflower oil and place on a non-stick baking sheet Cook in oven heated to 220 Celsius for 10 minutes until crisp Brush with a glaze mixed to taste of the shoyu or equivalent and maple syrup and sprinkle with a pinch of nutritional yeast flakes Return to oven for a further minute to allow glaze to solidify

Cream Potatoes and Sausage

Saturday Breakfast, A simple treat for two, economical and a filling comfort meal.
1. 4 (eyeball the amount) tablespoons scrambled vegetarian link sausage or patty;s, (or others like, Jimmy Dean's pre-cooked hot sausage, in the frozen section) sausage
(Season the above with 1/2 tsp. sausage or poultry seasoning if needed.)
2. 2 heaping tbs. of flour (If not enough leavens add some margarine or butter to make a rue.)
3. 1/2 pint of milk, 1/2 cream or use soy milk i.e. for vegans
4. 2 boiled potatoes in skins (I cook them day before then peel.)

Scramble the sausage links, (My recipes are a transition toward not eating meat but if you do eat it sparingly. (This is only a "seasoning" bit of sausage.) Some vegetarian sausages need to be seasoned and others are plain needing some spices. If you don't have the veggie links which is a lot easier.
(I do like a pinch of Cayenne in this recipe.) (Someone, at Christmas, gave me some Jimmy Dean's hot ready cooked sausage.)
This recipe is how I slowly used it up. Sausage (pork meat), brings on swine flue, or influenza more in the winter, especially after the holidays with rich meat meals. They body doesn't eliminate as will as summer when we add veggies and fruit. They will in themselves have elimination properties.

In the same cast iron skillet add in the sausage until warmed then flour and brown a bit (called a rue or gravy with butter or margarine).
Add in skillet the half pint of 1/2& 1/2 cream or milk and blend.
Next add in the sliced pealed potatoes, (round), salt and use fresh pepper tastes the best.
Take off stove when thicken.
* If you want a short cut use cooked hash browns. Boiled potatoes don't have to be fried. I always have at least 3 boiled potatoes in the fridge at all times to make quick stacks for my left-overs or for breakfast instead of meat. Also, I have a bags of frozen brown rice ready in my freezer for the same reasoning.

GLUTIN, METHOD

Making Gluten ~Meat Substitute: This is a hand version of making gluten. It can be started in a machine. Here is basic knowledge extracting the protein gluten by washing the whole-wheat flour (other flours will work) then converting gluten to a meat substitute. Different varieties of whole wheat have more gluten (protein) than others. Hard winter wheat generally has more gluten in it. (No GMO) Please make sure it's organically grown and not genetically altered and so will it food value. Children are less alergic when organically grown.
The advantages of making it in your kitchen are it so much tastier and a better product. Commercial gluten sold in Health Food sections of groceries and health food stores lacks the starch, minerals, vitamin bran and the wheat germ.
FACTS: A cup of raw gluten has 72 g of protein compared to 8.9 grams in milk, 10 g in TVP, 6 g in one egg, 7 g. in one oz. Hamburger patty and in 1½ cups of cooked beans only has 7 g. You can see it’s well worth any effort to process.12 cup of whole-wheat flour makes into 4 cups raw gluten. 4 cups raw gluten bakes into 9 cups ground gluten (299 g protein) and 9 cups ground gluten cooked is equivalent to 4 pounds of hamburger (325 g protein.)
Hand Method Mix in a large bowl
3 cups cool water
7 cups whole-wheat flour
Let rest in a ball for at least 15 minutes.
Knead for about five minutes. Also, you can use an electric; bread maker, bread mixer, beater i.e.Extract (wash) the whole wheat in or under water. This method is the most satisfactory and very easy. You can do three times as much as the other methods, with very minimum loss of gluten. This hand method will yield 4-6 cups of raw gluten.
You’ll need:Running water (cool) to wash away the starch, and bran. This washes the dough with water. You are separating the water-soluble starch from the gluten.Colander (plastic or metal not a screen strainer to catch loose gluten and to allow some of the bran to go through.Bowl to save the bran.
1. Cover dough with water in bowl in which you have mixed the gluten. Work dough with your hands to loosen it a bit keeping it together in a ball so you don’t loose it. (This is not necessary when gluten has been worked up with portable electric beaters.)
2. With the bowl or plate under the colander, place as much dough as you feel you can work with in the colander and hold under cool medium tap pressure.
3. Work dough with your hands until it becomes a tough (like bubble gum), elastic-like texture and the water from the gluten comes out fairly clear. You will see specks of bran. Don't expect to get it out completely. (At this stage faster speed with the tap water will take more out more bran if your not interest in saving any.) Repeat this procedure until the gluten has developed and is out 4-5 washings.
BRAN: As the plate gets fills with ban, carefully pour of excess water. You will probably only need to pour off excess water 2-3 times.Pour bran into container. Store it in refrigerator. It will keep in the raw stage at least one week. It can be dried too and put in compost.Let the bran settle first then pour off the liquid. It may be necessary to have thick bran for recipes, so plan here.Note: You can also save the starch water. When the water gets milky, thicker, and you can see bits of brown bran, pour liquid off into a bowl or jar. The properties of the starch water have nearly all the vitamins and starch from the wheat. Use this for thickenings, gravies, stews, soups, water for plants and even baths and lotions. Bran is cellulose, which means it is roughage. It aids in the muscular action of the digestive tract, thus producing normal elimination. Bran is a natural source of trace minerals and important in the balance of the body digestive system. It's high in phosphorus and potassium.Cooking with Gluten:This will make meatballs, patties, tacos, chili, sloppy Joes, sausages, etc., in casseroles and deserts. More of this will be in the next entry.
OR, if you’re in a hurry, just buy the gluten flour in stores and do one of the gluten recipes. Instead of adding water to the gluten flour add broths and etc. to flavor.
2. Cooking methods for a ground meat texture1. Place raw gluten on lightly oiled or greased cookie sheet (It will stick to pan.) Push from the center out and stretch on pan until gluten is fairly even. (Around 1/2'' thick)(Note: this process can be done on top of the stove boiling it in broths). It will swell). For easier handling, let the raw gluten rest after it has been washed for about 5 minutes. Leave in some of the bran it has a better flavor and is denser.
2. Preheat oven at 350 and bake 15 minutes. By this time it will bubble up somewhat. Twist fork in bubbles and thick-raised areas so as to let out the steam. Cook thoroughly for another 15 minutes. Or until it springs back when you press it.
3. When there are no crisp areas, (and cooled) you can run it through a food chopper or meat grinder on the medium disk, or grate on any shredder (largest holes, or in food chopper, till the gluten takes on a ground meat texture. This can be stored in the refrigerator or freezer. It thaws very quickly. To make meat (gluten) balls some may prefer gluten done on the larger disk.The ground gluten is use in making: meatballs, patties, and sausages, in casseroles and in some desserts. It also can be an extender or stretch hamburgers etc (GET A FOOD GRINDER, OR CHOPPER)

VEGETARIAN ROAST,

First Do the “Gluten Method” (the directions is in this blog) Cover completely the balls of raw gluten with the beef-flavored liquids in desired shape. For clear directions view link below...
Cover the pan with a lid and let simmer 8 hours. Be sure it doesn't run dry! This method develops a beef roast-like texture. This can be done on top of the stove or in a 250-oven overnight. This is best served by COOLING before slicing this thin and topping with gravy. This also can be bake in molds, or made in small or large size for roast's all depending on what you want it to be. Cooking Methods For Gluten_ Cubes and Strips Roll out raw gluten with rolling pin: 1/2" thick for cubes: 1/4" thick for strips. Cut into cubes or strips with scissors. Drop gluten pieces into boiling your flavored sauce. This enables the gluten to absorb flavor and hold their shape. Simmer 30 minutes. They will be spongy so you will need to dry them out before serving. Press out liquid and place in 300 oven for 30 minutes or until firm and chewy.

Ideas:*Place a heavy heat-resistant weight on top of gluten pieces or roast when boiling. The dough tends to float and will not absorb all the liquids evenly.
*Many good stocks are in the health food sections of grocery markets and health food
stores.
*Giving gluten a beef flavor: For every 1-2 cups ground gluten add 1 TBS beef seasoning, or 10-15 beef broth cubes. "Better Than Bouillon," or others from health food stores.
*Vegetarian Ideas: For every 2 cups liquid add 1 tsp. soy sauce, OR: 1 TB Worcestershire sauce, or 1 tsp. Kitchen Bouquet or i.e. and 1 tsp. raw mono oil such as olive oil.
Or, For every 2 Cups ground gluten + 4 cups liquid: Add Schilling’s Beef Stew Mix & Mushroom 1/2 package, Lipton Onion Soup Mix 1 package. Schilling’s Beef Base 2 - 4 TBS, Bouillon Cubes 2 (powder them), Wyler's Chicken Soup Base 4 TB and Colgins' Hickory Liquid Smoke 4 oz. (it give a barbecue flavor) and there are many other flavors or just boil in the non MSG chicken i.e. broths. Don't wash all the brand out of the gluten, remember fibers the key to health. VEGETARIAN MEAT CHOPS

Meat Chops
First see the “Gluten Method” page to prepare the Whole Wheat flour. Then start here:
5 lbs. Whole wheat flour (or any flour that contains gluten)
5 cups water and some sea salt.
Roll in a dough ball, separate into smaller balls, put them in plastic wrap and refrigerate for about 4 hours. Remove each (wash the starch out) under running water in a colander. Don't wash all the bran (fiber) out. Then, they are ready for the next step of cooking and seasoning. Gluten has no flavor.

10 cubes beef, veggie, chicken flavored broth to flavor the Staten. ("Better than Bouillon" has an excellent flavor and no MSG but is made from turkey i.e. They do have a veg. flavor too.)
2 large stalks celery
2 tablespoons salt
1 cup soy sauce
1 large onion
1 package Lipton's onion soup or other flavors
Directions: Read “Gluten Method” in this blog
Take scissors and cut the raw gluten into large sized balls dropping it into boiling broth with seven ingredients.
To the water add the broth cubes or broth, diced in; celery, salt, onion soup powders, chopped onion, and soy sauce. This broth, controls the flavor.
Other vegetable, like carrot, parsley can be added to this.
Boil at a low roll for 2-1/2 hours.
The broth can later be used as gravy stock. If you use vegetable broth (in this blog) chicken, or, beef i.e. make it equal the 5 cups of liquids.
Remove the cooked chops, cool, slice the gluten. Salt, pepper, bread or flour them then fry chops in good mono oil.
Add any flavors you prefer making it beef steaks or chicken steak, i.e.
Experiment with this recipe by adding dry yeast brewers vegetarian yeast within the breading. (This yeast will make it salty, so be careful when adding anymore salt.) The gluten in a while, it will rise. It makes the chops lighter.

Freeze what’s isn't eaten right away. Eat with a fibrous meal. Don't defeat any of the purpose in eating fiber by removing all the fiber contents out of the gluten.
This is the same as "Morning Star" veggie patties found in the markets for enormous prices. That is made much more cheap when done at home. Make up double the batches and freeze for another day.

Gluten Steaks, Roast or made into Strips
A Cooking Method For Gluten Steaks
RE: Read my page on the “gluten method” blog first, making the gluten for this steak, roast and strips recipe.
Bake 1-2 cups raw gluten in a greased tin can such as (can stews cans) about 4" diameter or No. 2 1/2 size. This is important if you want a definite meat-like texture for these steaks. It's not necessary if you don't care for a more uniform look as seen below. These definite steaks three factors are determine by:
1. +Gluten needs to be baked in large can (small cans let it raise too much, giving it a bread-like texture).
+Gluten needs to be pounded out, but not washed out too much, leave in some of the fiber which makes it more tender. (PHOTO; before washed under running water)

+Baked this at a low heat.
2. Place gluten slices in boiling flavored broth. The liquid should just barely cover the gluten. Simmer 30 minutes to an hour. The broth should be almost gone. Press out as much liquid as possible either with spoon, through a strainer, or blot with paper towel.

Place the gluten steaks on cookie sheet and in a 300-degree oven to dry out for about 30 minutes. After they have been in 15 minutes, turn them over. At this point, pound the steak with a meat tenderizer hammer (not so hard they fall apart) for cubed steaks if desired.

3. Dip steaks in beaten egg, or, evaporated milk (or just milk) or mono oil and "bread" in cracker, breadcrumbs, flour, or favorite shake and bake mix. (Flavor here)
+Then salt, pepper and flour then fry up in mono oiled pan until browned on both sides and serve with gravy or sauce.
Don't wash all the fiber out of the gluten! Eat this with a plant based meal.
