Vegan homemade cream cheese

Vegan homemade cream cheese
Are used to make a lot of different cheeses we had goats and we had to do something with the extra milk I also learned how to make cottage cheese and other kinds of cheese they all start the same way as this.
Sometimes we don’t have milk around nor do we want it in some cases this is a good recipe I recognize I’ve done it many times.
It would make excellent or derver s  (my spell couldn’t pick it up either) for any guest or parties. You could probably start it with any milk substitute but make sure it’s organic if you can it’s better for you and your family.

11 g protein. Tofu, some brands leave in more fiber.

These seasoned fried tofu nuggets make a great vegetarian option for the more popular chicken nuggets. Dipped in a seasoned batter then fried to a crisp golden brown, these nuggets are known to convert tofu haters into lovers. I've heard of these spray and oven bake them too. Very versatile after learning to use this product.
It's better to go to the HFS and buy tofu made from Organic soybeans . They have flavored tofu and already cubed. Just add more fiber for a better balance, with brown rice or stir and fry vegetables.

Ingredients

    1 package extra firm tofu
    ½ cup all-purpose flour
2 tablespoons nutritional yeast (available in the health food section, bulk spices) or, chicken flavoring in bulk.
    2 teaspoons garlic powder
    1 ½ teaspoons salt
    ½ teaspoon paprika
    ¼ teaspoon black pepper
    2/3 cup water
    Coconut or Peanut Oil

Instructions

Place the block of tofu on top of a flat strainer and place a flat plate over the top of the tofu. Then place a heavy pot on top of the plate. This will allow the tofu to expel as much water as possible. Allow the tofu to drain for 30 minutes.
Cut the tofu in 1-inch cubes.
In a medium bowl, stir in the flour, yeast, garlic powder, salt, paprika, black pepper, and water. Stir the batter until smooth.
Pour 1/3-inch level of oil into a medium pan. Heat the oil on medium heat.
Working in small batches, generously coat the tofu cubes with the seasoned batter.
Without overcrowding the pan, fry the bottom of the tofu until the batter turns to a crispy golden brown. Flip the cubes and cook until the rest of the tofu cubes are crispy and golden brown. Place finished cubes on a plate lined with a paper towel.
Continue to do this until all the cubes have been fried.

The tofu will be very hot. Allow the tofu to cool for five minutes. Enjoy while warm and crisp.
Serve with brown rice, or as a topping for salad. (Slice like spam for sandwiches)Image result for cubed tofu Try chicken flavored or beef taco's one night

VEGAN/VEGETARIAN BURITO BAKE and sour cream

      Easy Burrito Bake

      Makes 2 servings

      2 8- to 11-inch whole-grain tortillas

1 to 1¼  cups cooked pinto beans (depending on the size of your tortillas) (drained and rinsed if canned)

1/2 cup prepared salsa, plus more as needed

1/4 cup shredded vegan cheese (optional)

4 cups well packed mixed spring greens

Preheat the oven to 400 degrees F. Line an 11 x 17 inch baking dish with unbleached parchment paper, allowing a 7-inch overhang on the two lengthwise sides of the dish.

Put a tortilla on a large dinner plate. On one side of the tortilla, layer half of the beans, 2 heaping tablespoons salsa, half of the vegan cheese, and one-third of the greens. Roll the tortilla tightly around the filling and place it seam-side down on the prepared baking dish. Repeat with the remaining tortilla.

Bring the sides of the parchment paper over the burritos, fold it over, and seal tightly. (This will keep the burritos from drying out as they cook.) Bake 30 to 40 minutes, or until heated through. Remove from oven and let stand 5 minutes before unwrapping the parchment.

To serve, place a burrito on a colorful plate and top with 1 to 2 tablespoons salsa. Top with 1 tablespoon of  Vegan “Sour Cream” and serve the remaining greens on the side.

      Vegan “Sour Cream”

      Makes 6 to 8 servings

16 ounces soft silken or regular tofu, drained

2 tablespoons freshly squeezed lemon juice

      1/4 teaspoon sea salt

Put the tofu, lemon juice, and sea salt in a blender and process until smooth. Taste and add additional lemon juice and sea salt, if desired. Chill 1 hour and serve.

Image result for baked tortilla chips

      Baked Lime Tortilla Chips

      Makes 3 to 4 servings

4 teaspoons freshly squeezed lime juice

4 whole-grain tortillas (spicy variety works best; see note)

      Coarse sea salt, to taste

Preheat the oven to 400 degrees F. Line two large rimmed baking sheets with unbleached parchment paper. Pour the lime juice into a small bowl.

Put 1 tortilla on a large plate. Brush one side of the tortilla with a very, very thin layer of lime juice, using a pastry brush. Flip and repeat on the other side. Repeat with the remaining tortillas.

On a large cutting board, slice a lime-covered tortilla into chip-sized wedges or strips. Repeat with the remaining tortillas. Place the tortilla pieces in a single layer on the prepared baking sheets and sprinkle liberally with the coarse sea salt.

Bake for 15 to 20 minutes or until the sides of the chips are crispy and slightly golden. Transfer the chips to a rack or large platter to cool. Serve warm or at room temperature.

Chef’s Note, Gluten-free option: Use brown rice tortillas instead of whole-grain tortillas.

      Chocolate Rice Pudding

      Makes 4 servings

      PUDDING

      1 cup short-grain brown rice

2 cups nondairy chocolate milk, plus more as needed (see variation below) Organic soy has more protein

1 cup filtered or spring water, plus more as needed

1/4 cup brown sugar, maple sugar or your preferred dry sweetener

1/2 teaspoon ground cinnamon and, pinch of nutmeg is optional

      2 heaping tablespoons raisins

      TOPPING (Optional)

Cover and bring to a boil over medium heat. Decrease the heat to medium-low and cook for 55 minutes to 1 hour, or until the rice is tender and most of the liquid has been absorbed. Check and stir every 20 minutes or so, adding more water or nondairy milk , 2 tablespoons at a time, if pudding becomes dry.

Cover and remove from the heat. Let the pudding stand for 20 minutes. Spoon the pudding into 4 dessert dishes. Serve warm or refrigerate for 4 to 6 hours and served cold.

      VEGAN CHEESE: HOMEMADE

Homemade Vegan Cheese...so expensive at Health Food Store and not available in so many areas and grocery's. Take time out and make plenty. Good Gift too.

Make your own homemade vegan cheese using cashews, nutritional yeast, and agar powder. It's much easier than it looks!
      Author:
      Recipe type: Snack, Appetizer
Ingredients (I've always read the labels on product to get an idea for ingredient's or substitutions.)
      • ½ cup + 2 tablespoons raw cashews (or, another nut?)
      • ¼ cup nutritional yeast
      • 1 teaspoon onion powder
      • 1 teaspoon sea salt
      • ½ teaspoon garlic powder
      • 1+3/4 cups plain unsweetened soy milk or half rice milk?
      • ½ cup agar flakes (or 8 teaspoons agar powder)
      • ¼ cup canola oil (sub. this oil...I don't care for canola)
      • 2 tbsp yellow or white miso
      • 1 tablespoon fresh lemon juice
      • 3 teaspoons white truffle oil (optional) (Sub.)
      • Chopped chives (optional)
      Instructions
      1. Lightly oil 3-4 small ramekins.
      2. Using the pulse button, finely grind the cashews in a food processor (do not allow the cashews to turn into a paste). Add the nutritional yeast, onion powder, salt and garlic powder. Pulse 3 more times to blend in the spices.
      3. Combine the soy milk, agar, and oil in a heavy medium saucepan. Bring to a simmer over high heat. Decrease the heat to medium-low. Cover and simmer for 10 minutes, stirring occasionally, or until the agar is dissolved. With the food processor running, gradually pour the milk mixture through the feed tube and into the cashew mixture. Blend for 2 minutes, or until the mixture is very smooth and creamy. Blend in the miso, lemon juice, and truffle oil and chopped chives (if using). Note: if your food processor isn't very big, simply pour the cashew mixture into the saucepan and stir it vigorously for a minute or so, and then add the remaining ingredients.
      4. For grated or sliced cheese: Transfer the cheese to a container; cover and refrigerate until it is very firm, about 4 hours. Once it is firm, use a knife to gently remove the cheese from the ramekin. Grate or slice the cheese as desired.
      5. For melted cheese: Use the cheese immediately as melted cheese. To make the cheese in advance, cover and refrigerate it. When ready to use, melt it in a saucepan over medium heat until it is smooth and creamy, stirring frequently and adding more soy milk to the melted cheese to thin, if necessary.
      6. The cheese will keep for 4 days, covered and refrigerated.

      GOLDEN TOFU NUGGETS

Golden Meat (tofu) Nuggets This is so basic, method, type of recipe for making wonderful tasty tofu nuggets (crouton style) for casseroles, salads, or anything requiring meat and can even take the place of macaroni or potatoes in a dish. It’s very easy but you need to pre-arrange to drain the organic extra firm tofu (more fibrous kind) and wrap in a lint free clean towel so it can drain over-night. (For this dish, the other style will make it better for a softer style of dishes) For some a delicious way of adding in protein without killing of more animals. Fry or bake it to a soft or more crispy stage. From here use your own imagination...
      INGREDIENTS;
One tube of extra firm organic tofu (more fiber-firmer the better)
Organic butter for flavor(for vegans margarine or skip) or just toss in a good mono oil.
      2-3 packages of Mrs. Dash
      Olive oil or safflower
A flavor of your choice last minute of frying (soy sauce, Worcestershire, chicken, beef or turmeric for color and to season. This kitchen herb is most valuable for coloring tofu and in Curry dishes.
Sea salt if needed for some recipes? (Taste first)(magnesium in seas salts)

Next morning after the tofu has been drained and wrapped in towel to absorb most of its moisture it is ready to slice through to about ¼ -1/2 inch slices. Then to make them perfectly square slicing them again (evenly in the same equal amount) into cubes. Add in the oil so not to burn with the butter. Then add the cubes of tofu with Mrs. Dash. Let the cubes get golden before tossing and turning each time. Do not break. Toss lightly and brown to desire texture. The first couple of time taste before taking off the stove to see if it’s the texture you desire for what your going to do with time. Cook till golden. The oil is needed to give them flavor and meat has more fat. (Can be baked w/o fat?)
Add in the flavoring or keep plain, (smoke flavor etc., lightly at first) do not add in salt till you are through flavoring. (Taste) Remove and drain on paper towel to remove any excess oil.

They are now ready to add to any dish that would require meat or in a sweet and sour soup or your salad. I eat these plain…. I love them. Do eat along with fibrous foods. This is for all tofu dishes because it has in a higher than normal protein count than normally found in nature. (Natural-as directly from nature) The excess or left-overs, if any, can be stored in a baggy in the freezer ready to use in canned soups or such emergencies. It is possible to alter this recipe by crumbling the tofu in chucks (squares) not smaller than ¼ inch and follow the same directions.
This may be better for chilies and bean recipes with the chili seasonings added with the tofu last minute so not to burn. Eat them plain for a protein snack, or freeze some of these legumes for salads and other dishes.
