SPAGHETTI AND VEGAN MEATBALLS


Ingredients:
1 tablespoon extra-virgin olive oil
1 cup chopped yellow onion
4 cloves garlic, finely chopped
1 cup roughly chopped cremini mushrooms
1 cup packed baby spinach
1/2 cup sunflower seeds
1 cup cooked or canned black beans, rinsed, drained and divided
2 teaspoons dried organic basil
2 teaspoons dried organic oregano
1 cup frozen organic brown rice, thawed
8 ounces organic spaghetti (your choice, no gluten, whole wheat or many other grains) read directions on pkg.
1 (25 ounce) jar organic pasta sauce

In a large skillet, heat oil over medium heat. Add onion and garlic and cook until tender, about 5 minutes. Stir in mushrooms and spinach. Cover and cook until mushrooms are tender and spinach wilts, about 5 minutes. Meanwhile, in the bowl of a food processor, pulse sunflower seeds until coarsely ground. Add cooked vegetable mixture, half the beans, basil and oregano. Pulse until mixture is just coming together. In a large bowl, combine puréed mixture, remaining beans and rice. Stir until combined.
Preheat oven to 350°F. Form mixture into 1 1/2-inch balls and transfer to a lightly oiled baking sheet. Bake meatballs 30 minutes or until heated through and crisp on the outside. Meanwhile, cook spaghetti according to package directions. Drain well and return to pot. Add pasta sauce and toss until combined and heated through. Add meatballs and toss very gently to combine, taking care not to break up meatballs. Serve.

Larry Kotlikoff: It doesn't seem right for a good reason. It's not. The wife's eligibility for a disability benefit doesn't depend on the husband's taking his Social Security retirement benefit. Her eligibility for receiving an excess spousal benefit, in addition to her disability benefit, is conditional on the husband filing for his retirement benefit.
Perhaps the Social Security staffer was referencing what happens to the wife's disability benefit when she, not her husband, reaches full retirement age. At this point, unless the wife withdraws her retirement benefit, her disability benefit automatically converts to her retirement benefit.
The wife, in the situation you describe, can choose to not take her excess spousal benefit and withdraw her retirement benefit when she reaches full retirement age, then apply, at full retirement age, just for spousal benefits, and wait until age 70 to restart her retirement benefit, at which point it will be 32 percent higher (and adjusted for inflation).

Sydne -- Pottstown, Pa.: My husband will be 62 next February. I am 60 and have been the higher wage earner for many years. He is a farmer and I'm a nurse. With what I've been reading, it sounds like, if necessary, it would be best for my husband to apply for his retirement benefits early, and then check when I turn 66 to see if the spousal benefits would be greater than his reduced retirement benefits. PEANUT BUTTER FROSTING

This peanut butter frosting's great on chocolate cupcakes.
1 cup powdered sugar
1 cup creamy peanut butter
3/4 teaspoon vanilla
5 tablespoons organic butter (margarine for vegetarians) or, sour cream
Mix; top with chopped peanuts, crushed chocolate chips, careful not to add any corn syrup candies.

COFFEE BREAK; COOKIES

They're is more than one way for coffee breaks...Take 'em to work, give to your coffee drinking friends, only one, more for you. (Lift your depressions with coffee not sodas which is 4 times as bad for all of us.)

Coffee Walnut Cookies
 
Ingredients;
  • 2 cups all purpose flour
  • 1 cup walnut halves
  • 3/4 cup of sugar * or less, 1/2 honey makes them moist
  • 1/4 tsp salt
  • 2 tsp fresh ground coffee beans (medium roast)
  • 1 tsp vanilla extract
  • 1 1/2 sticks salted butter

or add pecans instead of walnuts
Procedures
  1. 1st
    Combine the flour, walnuts, sugar and salt in the bowl of a food processor and pulse until the walnuts are finely ground. Add the ground coffee and pulse to mix. Add the butter (cut in several pieces if firm) and pulse until the mixture looks damp and crumbly. Drizzle in (the brandy flavoring is optional) and/or vanilla extract and pulse until the dough begins to clump up around the blade. Remove the dough, press it into a ball and knead it by hand a few times to complete the mixing.
  2. 2nd
    Form the dough into a 12-inch log about 2 inches in diameter. Wrap the dough in plastic wrap and refrigerate for at least 2 hours, or preferably, overnight, or up to 3 days. The dough can also be frozen for up to 3 months. Brings out the flavors.
  3. 3rd
    Position the racks in the upper and lower thirds of the oven and heat the oven to 350 degrees. Use a sharp knife to cut the cold dough log into one-fourth-inch-thick slices. (If the dough crumbles when you cut into it, let it soften for several minutes.) Place the cookies at least 1 inch apart on silicone-lined baking sheets. Press a coffee bean into the center of each cookie.
  4. 4th
    Bake the cookies 150 f. until light golden brown at the edges, 12 to 15 minutes, rotating the sheets from top to bottom and front to back halfway through the baking. Let the cookies firm up on the pans for about 1 minute, then transfer them to a rack with an off-set spatula.
  5. Cool completely. These cookies are delicious fresh but are even better the next day. They can be stored in an airtight container for at least a month.

BREAD CHEESE CASSEROLE


Bread Cheese Casserole by pt Sherm

Cook Time:1 hr 10 min Level:Easy Serves:6 to 8 servings.
Ingredients:
3 tablespoons butter (or, part olive oil)
1 small chopped yellow onion
1 or 2 cups frozen shredded hash browns (alternative is mash left-over mashed potatoes i.e.)
2 1/4 cups whole milk OR,  1/4 cream
8 large eggs (or, use flax seed meal for all or in place of some of the eggs)
1 teaspoon salt, and fresh parsley
1/4 teaspoon black pepper
1/4 teaspoon freshly grated nutmeg
2 tablespoons Dijon mustard
8 cups cubed French or Italian bread, crusts removed (or firm hard Cartesian)
2 cups (1/2 pound) grated Cheddar or Colby cheese etc., or in part; sharp Cheddar
2 cups (1/2 pound) freshly grated Parmesan
Directions; Preheat the oven to 350 degrees F.

Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.

Melt the ORGANIC butter in a large frying pan. Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Saute until soft, about 5 minutes.

In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.

To assemble: Spread the onions and hash browns evenly at the bottom of the greased dish. Place the bread cubes evenly on top of hash browns. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar.

*Cook's Note: Save a few tablespoons of Cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted Cheddar.
 
Reasonings are: This is just a good old plain basic bread and cheese recipe. Especially served when you don't want mac and cheese or kids sick of it and want a variation.
USE WHAT YOU HAVE ON HAND; IN SEASON, OUT OF YOUR GARDEN; sometimes, mixed frozen vegetable's or, fresh cooked garden veggies or, you could season with a small bit of meat to taste and balanced with less cheese.

TRAPPING BED BUG: Nat/Geo

Most bed bug traps and tests can cost $50 or more, but this DIY trap is so simple and cheap that the researchers that came up with it want people to try it themselves. Ideally, it'll catch the earliest stages of an infestation, when the critters are easiest to eradicate. All you need is sugar, water, and yeast.

Here's how to make one, according to this NatGeo article:

Fill an old coffee cup with ten tablespoons (150 grams) of sugar, two tablespoons (30 grams) of yeast, and one and a half quarts (one and a half liters) of water, and put it in the middle of an upturned dog bowl. Voila! You have just made a bedbug detector that beats others on the market and is much cheaper.
For clarity's sake, they're suggesting you mix everything in a container

(Note: the original experiment actually used a carved out soda bottle for this, which would make more sense than a coffee cup) and then put that container in the center of the upturned/overturned/upside down dog bowl. The CO2 reaction in the large container will attract the bugs, and when they get into the upside down dog bowl, the sloped sides will trap the bed bugs like a moat so they can't get out. According to the study (linked below) they also sprayed some adhesive on the sides of the bowl just to boost the efficacy of the trap.

In any event, the yeast eats the sugar, and releases carbon dioxide, like humans do when they exhale. It's also the gas that bed bugs use to find sleeping hosts, and they're very good at tracking carbon dioxide, even across long distances.

The trap won't kill the bed bugs, but it will catch them, and Rutgers University entomologists Narinderpal Singh, Changlu Wang, and Richard Cooper all agree that it can detect signs of an infestation early enough to be quickly and swiftly dealt with. The researchers even put their test up against the leading commercial version and found that their method was much more effective at keeping trapped bed bugs inside, so your positive result doesn't escape, leaving you to think everything's fine. UPDATE: New information from a study shows some bed bugs can carry drug resistant bacteria - even MRSA.

Five bed bugs were tested and experts say while they carry the superbug bacteria, they are unclear of how bed bugs got the bacteria.

Dr. Scott Mahan, an infectious disease specialist, says there hasn't been any association between the bed bugs transmitting the disease to humans.

Mahan also says while the bacteria is drug resistant, "They are resistant to the drugs we used maybe 10 or 15 years ago. That doesn't mean there aren't drugs that can work against them."

So the bottom line - try and avoid bed bugs if you can.

TRY: the dryer sheets under mattress to keep them away, and in suit cases as you travel.

WILD FOOD SOURCE: PRICKLEY PEAR JELLY

This will be a part of my wild food sources. I pinned this recipe on Pinterest then on my Twitter. They have excellent recipes my style of cooking and preserving. I hope you are preparing foods for bad times ahead. (PREPPERS know not to pick near the road nor where sprayed chemicals have been, and not to ruin the sight for next year.  Low Sugar Prickly Pear Jelly
4 cups prickly pear juice (requires around four pounds of fruit)
1/2 cup lemon juice
3 cups sugar
1 package low sugar pectin

1. Burn off the spines by holding the fruit over a burner on the stove for a few seconds.
2. Quarter the fruit and place in a pot. Cover with water (around 2 1/2 cups). Boil for ten minutes. Crush the fruit with a potato masher.

 Update 12/5/2012: I now recommend using a food mill, though the boiling technique also works. See our post on using a food mill to juice prickly pear fruit.
3. Strain through two sheets of cheesecloth placed in a colander. Gather up the corners of the cheesecloth and give the pulp a squeeze to extract as much juice as you can.
4. Pour four cups of the prickly pear juice into a pot and add a half cup of lemon juice.
5. Mix a quarter cup of the sugar and a box of low/no sugar pectin and add to the juice.
6. Bring the mixture to a full boil.
7. Add the remaining sugar and bring back to a full boil. Boil for one minute, stirring constantly.
8. Pour into six 8 oz jars.
9. Process in a boiling water bath for ten minutes.

Prickly pear fruit (called "tuna" in Mexico) come in a variety of colors. My plants make an orange fruit that matures in August. I love the taste of the fresh fruit, but it’s a bit of an acquired taste due to the abundant seeds and the nasty spines (technically called glochids).

Unlike a lot of jelly recipes floating around the interwebs, I guarantee that this one works. It basically follows the ratios and instructions for red raspberry jelly as detailed in the Sure Jell pectin box. In my experience with jam and jelly recipes, sticking with the directions in the pectin box yields consistent results. And stay tuned for a video I shot on how to make this jelly.

Update: Green Roof Grower Bruce wrote to suggest using Pomonas Universal Pectin to reduce the sugar level of this recipe even further. I’m going to give it a try. In the meantime the folks behind Pomona’s have a very similar recipe for prickly pear jelly that uses less sugar here (pdf).


Update 8/28/2010: I tried the Pomonas Universal Pectin prickly pear jelly recipe linked to above. It works, and uses one cup less sugar than my recipe above. The color is also more vibrant due to the larger percentage of fruit. However, both Mrs. Homegrown and Homegrown Neighbor found the more gelatinous consistency of the Pomonas prickly pear jelly objectionable. Verdict: for now I’m going to stick with SureJell or equivalent.

Emergency Supply Kit
ASK THE POOR HOW TO SURVIVE! My family use to move about every summer for about three-four months following the crops. We live on only what could be fitted in the trunk of the car. We camp out in city and state parks overnight with six of us in the car. We slept and ate in the park and worked along side with my parents. So believe me I know how to survive for 72 hours on basic's. With that experience and idea in mind, this is a meager list of emergency supplies we survived on.

BUY AN: EMERGENCY SUPPLY KIT (FREEZE, DRY ITEMS 2 HRS, FIRST, THEN STORE)
1. Breakfasts: Oatmeal, malt o meal, etc., and sugar for each person. One cup servings per person for 3 days is 3 breakfast. (Grain and protein)
2. Lunch: Jar of peanut butter (assorted nuts), or jam,*(2), and powdered milk, (or, Jerky, canned products such as tuna, meats are all-optional) The pancakes are your breads and is basic. (Grain, fruit, vegetable and protein)
3. Dinner: You going to make brown gravy with pancakes. If you brown the gravy you'll not need meat. Buy a Combination of Biscuit and Pancake mix (big one) (See below) or , 5 lbs flour, can of baking powders, salt and small can of shortening. There is directions on the baking powder can to make pancakes add more liquids. (Grain, protein and fat)
4. 1 gallon of water (or more) per person x 3 days (at least 6 gallons must + more if you plan bathing, etc.) Boil the water first so no bacteria will form.
5.Fuel Sources: Oven or Cooking Stove can be make of large cans, olive oil cans will make a good oven. We used just use a large skillet sat on top of 3 rocks (about the same size) directly on top of the fire. Some paper to start the fire, lighter, dry wood or self lighting charcoal if wood i.e. (Matches are harder to store, a candle lighter will also work.)
8. Cloth diapers (You'll be able to find some water to boil and wash them out) Need a to wash this in? A good container is 5 gal pop corn cans or a big pot. It can store supplies in too. Other baby equipment, the baby's age will determine the needs.
9. Prescriptions you use, First aid kits? Over the counter drugs, plus, diabetic equipment. Store meds, in small plastic bags, count out what extra you can spare, date then label. First aid kit can be a salve, tape, insect repellent and toilet paper. Don't need this? Skip
10. A basic soap for everything. (Ivory or Napa bar soap)
11. Linen: Face, wash, and dish cloths. (You can make do with one each person for 72 hours) What do you have available? Keep it light.
12. One of these: Quilts, thermal blankets, or sleeping bag, if you own one, (one on bottom and one on top blanket making it a male and female pallets). What you have make it do! A plastic garbage bags under keeps you dry in some areas of the world. You've got the idea!
13. Utensils: Plastic plate, big spoon, fork, pancake turner, knife, can opener, rolling pen etc. Note that you can just use cans that food comes in for cup, glass, and a bowl. (It's only 72 hrs.) Plan it out.
14. A good CAST IRON skillet it will be your stove too. Use what you have for now, but later buy an extra one to store permanently. Very essential!
Why a list? Some panic in times of disasters and minds becomes fuzzy and confused. Keep this list handy to check off items. Remember to store, what you have on hand NOW. Use this list to shop for the other items later.
* Snacks are optional additions: Beverages: teas, Pero, Postum, Sanka, hot chocolate, coffee (if not Mormon), razor, canned vegetables and vegetables, spices, or rice. Canned items easy and ready to use out of the can. Sanitary napkins or senior pads, purse, and other items may be added here. It's your list and add in personal needs for 3 days.

My parents were migrate workers we lived on pancakes and gravy (hot food/milk) It was comfort food for us kids. Maybe you can use this or not?
Pancakes or biscuits (grain or beans here)
2 cup flour
2 tsp. baking powders.
1 t salt
6 Tbs. shortening (oil is hard to keep and handle)
3/4 cups of milk or water (adding more liquids for making pancakes)
How much to make this gravy or rue depends on the size of your family or half this recipe.
OR, you can make up a mix from my other journal...if on line  "Quick Bread Mixes" recipes.
After making one of these mixes from my blog, freeze it in a plastic container for 12-24 hours. That goes for any grains (oatmeal, rice, malt o meal, etc.), that will be stored longer periods of time. This will kill any weevil inside afterwards can be stored in the lined with plastic 5 gallon bucket.
Gravy
1 Tb. of shortening and flour per person with every cup of milk (brown the flour in the shortening first. Then add the milk till it stops thickening. You will not need spoons, etc., use your pancakes to sop up the gravy. It's very comforting food and hot. It's basics. Sub. for another cultures here if it doesn't fit your life style. *(1)
*Make 2 lists of everything you gather in each bucket. Number each list and bucket placing one list on top of each bucket and seal. Keeping a copy of the contents of each bucket is essential. You'll know where you've been and where to go from them.
* Concentrated 30 lbs (5 gal.) soap comes in great container because they are water proof, this style of lids seals tightly, water and critters can't get into it. If your bucket has comes with handles, it will be easy to carry. The soap is very economical, too, for these hard times. Use whatever container you have on hand. Place this storage handy ready to go out the door as needed. (5 gallon of popped popcorn cans?)
*Yes, grab fresh vegetables like potatoes, carrots, etc., on the way out! (and we ate from nature in the wild. Mother was part Indian and she knew what to look for and do.
STORE WHATEVER YOU HAVE ON HAND. DO IT NOW!
* (1) Did you note? You just need to plan to sub for one easy meal for 3 meals for each person with breakfast, lunch or dinner. Feel free to sub and do your own culture foods! The ideas here is bread basic ("Staff of life") to everyone. Add Rice, freeze first 24 hr. in freezer. Keep it simple.
Plan for 3, is 9 meals a day x 3 days is 18 meals for one person. DO THE MATH! That's 3 breakfast, 3 dinners and 3 lunches. For two, just double the 18.
*Documents: Make copies of important papers, emergency contacts, credit cards and pre-paid phone cards, purse and CASH (power will be out)! (Note: Keep small emergency car kits in auto). Cell phone charges and carry a charger in that plugs into the lighter to keep phones operational at all times.
Other Items: Yes a gun, bullets, i.e. toilet paper, first aid ointment, tape, contact solution, socks, coats, baby needs, whistle, can opener, knife, fork, mess kit. Keep some of these supplies in car or and purse. (Don't tell others about your storage.)
*(2) Plan to add enough peanut butter and/or jam for each meal. Jam keeps a long shelf life.

Do your style but keep it simple, quality, basic and cheap! Make your own list...however, take my experienced council...do not mostly use and store canned processed food storage...they are for the dumb rich...been there, done that, hated it and had to give it all away. Story only what you use!!!

NO SUGARY DRINK FOR POOR WITH FOOD STAMPS?

Research has linked sugary drinks to 180,000 annual deaths worldwide definitely a big problem. And,is linked to the growing problems of diseases, diabetes and weight problems.

Mayors of New York, Los Angeles, Chicago and 18 other cities are pushing against allowing food stamps (poor) be used to buy sodas and other SUGARY DRINKS. (Or, do they need some positive news and to get their names, like NY Bloomingburg attaching to so his called "some good controlling the masses causes?"  Or, just more confusing, whimming, whining babbling.

My point is if this GOVERNMENT know; and their speaking out against high fructose-corn syrups sugars than why not do it for everyone in the USA? A land of free choices-right and why not the Aspartame i.e. (now sneaking in new names for the same poison) ? Or, in other words why not do this for all the children in this country? Isn't it obvious they know it causes slow deaths by their stances?  Of course they do. Take them all off the market for everyone, why just the poor? And, limit cool-aid, cookies, cakes etc...

 The folks now on food stamps (thanks to the government) are college educated without work and are not stupid poor folks...hello! (so-in-tuned-these governor's) You don't tell them what to do, you educate them then show them you mean business by ruining the culprit's that sell their booze (allegory). Or, leave them alone. Many are on the new disability's programs because they don't like to beg for a living it's against the law. It's a new world for the food stamp world. And, the bottom line is WHO NEEDS TO SAVE MONEY?
 
Oh, maybe it saves gov. money, however they subsides these programs?

Mayors say it's time to look at the use of the subsidies of the program, called the Supplemental Nutrition Assistance Program (SNAP), for sugar-laden beverages in the interest of fighting obesity and related diseases.
Last year, more than 47 million Americans used food stamps under SNAP. That's another government programme they've created for the masses of poor they've created.
 

 But, Why not for all by making laws for the safety of everyone? My point here is this is just babble, because these folks can get cash and buy sodas. Quit wasting our time with their attention getter for votes, stop whimpering and, get at the real problem...food safety of genetically altered ingredients in our foods. It will never happen also because of the money in the products (sodas-sugars corps of Wall Street) We're out of control or you might say controlled by these investors.

"Why should we continue supporting unhealthy purchases in the false name of nutrition assistance?" A quote from the 18 Mayors...Do they support these ideas in schools? NO ...so then, who's stupid...............? From his earlier quote of the month from who is doing the same- keeping up his name in the news that's is for more positive campaigning purposes and for all their same reasoning's.
