AU GRATIN POTATOES

Be a smarter vegetarian. We need lots potatoes recipes. The potatoes have gobs of minerals such as potassium and the organic cheese is also a protein and get a bum rap by so called nutritionist. Some of the milk can be sub. with the same amount of sour cream, just as in funeral Au Gratin potato recipes...add it in place of the gravy, and be thickens with no gravy at all. Chopped herbs can be the garnish such as curly leaf parsley or chives instead of the onions.


INGREDIENTS: 6 russet potatoes, peeled and sliced into 1/4 inch slices1 medium onion, sliced into rings. Salt and pepper to taste; 1/2 cup butter; 1/2 cup all-purpose flour; 3/4 teaspoon salt; 3 cups milk or cream i.e.; 2 1/4 cups shredded sharp Cheddar Cheese; Preheat oven to 350* F.; Generously butter a 2 quart casserole dish.....© copyright 2006-11 by P.T. Layer 1/3 of the potatoes into bottom of the buttered casserole dish. Spread with 1/3 of the onion slices, season with salt and pepper. Repeat these layers two more times.
In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Stir and cook until mixture is thick. Add all the cheese and continue stirring until it is melted.
You’re going to find that the sauce recipe makes quite a lot of sauce. If you don’t wan tot use all of it, just reserve it and refrigerate it. You can heat it later and pour it over veggies or even toast and sausage for breakfast.
Pour cheese sauce over the potatoes, sprinkle with paprika and cover the dish with aluminum foil.
Bake 1 1/2 hours in the 350 F. oven. (depends on oven to 400 F.)

Formula:FLU SEASON

Tincture of Garlic or Onion Tincture of Garlic or Onion (This is a good basic syrup recipe for coughs, asthma etc.) colds and flues. It is natural sulfa enzyme's and works muck like the copy-cat sulfa drugs in the same way.
I wouldn’t believe this formula worked except I was coughing my head off one day bronchial asthma) and happen to be in the health food store and asked the clerk for a cough syrup natural remedy. She referred me to the one in the fridge that was this one. When I got home I looked it up in my herbal books. It was from one of the herbalist in my area which was one of my teachers. Sure enough I had the formula in front of me. His original company I no longer make it up. When you make a formula up there's always too much and time. The over the counter cough syrup are not working...read the lastes new or TV news. It only comes once and is gone and people forget the uselessness of children's flue medications today..
Tincture of Garlic or Onion (This make up a Syrup of Garlic or Onion)
+1 lb. of minced or chopped garlic cloves
Equal parts apple cider vinegar and distilled water sufficient to cover the garlic (*Or/and Onion which is weaker but great for children and in the orginal formula. Get the stronger onions.) Garlic presses are great.
* PERSERVITIVES to store longer; 1 pt. of vegetable Glycerin, (if stored longer.) Added glycerin at the very end, you'll need to strain the concoction. You can add stick a cinnamon, clove oil, or any oil to cover the taste, however, will not smell this on your breath.
Or, optional, (cloves) stick the brown bottle at the time when stored. . (Also, you could use grain Vodka alcohol and/or Apple Cider vinegar is used in making of tinctures) I don't store mine a long time so I just use Bragg's Apple cider Vinegar.
(You can add lemon juice, ginger, cinnamon, clove and parsley to help with the odor if too offensive too. It's your formula. Lemon cut the mucus in sore throats and adds vitamin C.) Add the parsley before adding the honey etc., afterwards, throw it away or chop some of it in the concoction after straining in Tupperware plastic strainer. Their holes are smaller. Strain again through good quality paper towels. This is very slow, other ways can be just as effective like, cheese cloth etc.
*3 lbs pure honey (last min. add)  (I'm going to add because of econimal issues other organic sugars will work (Agava i.e.) I've cut down on the amount of honey...and don't forget to add this at the end...Do not strain honey...
Place the garlic into a wide mouth jar, cover with the vinegar (or, acahol) and water; close, shake occasionally; allow to stand in a cool place for 4 days, Your macerating the formula...(shaking thoroughly)
1 -2 times daily_shake and allow to stand another day; strain with pressure and filter through muslin or thin linen cloth; add the GLYCERINE or one of the other perservitive, and honey and stir until thoroughly mixed; Seal in dark jars tightly and store in a cool place.
Dosage: 1 tsp. – 1 Tbs. 3-4 times daily between meals Uses: Asthma, bronchitis, catarrhal conditions, phthisis, tuberculosis, coughs, dyspnea, heart weakness, internal ulceration and so much more but this gives you the idea. Look up properties of Garlic. Garlic is a good medicine and can be used for other ailments. Use the onion for the cough's is my suggestion.
(Their are ways to take the stronger garlic pungent odor out. Work with the vinegar first with caraway, cloves, fennel seeds, cinnamon stick is storage container, macerate, strain, then add the glycerin-honey.) I do not mind the taste with out all the extra herbs.
My style is to add a carrier herb (catalyst), like lobelia tincture, a very intelligent herb, which knows what to do to assist other herbs where to go like a general. The lobelia tincture or choose another; use strained ginger root (also a catalyst), too, (and so is cayenne). These are all optional. Catalyst herbs move herbs quickly through the body and good carriers of other herbs. A good herbal formula has a catalyst in its composition. Memorize these three and use one in all formulas.
*You can do this with stronger onion (especially for the children) as well as garlic.
It's doesn’t seem as strong but don't under estimate it, I’ve used this myself a lot. I only like fresh garlic in season or onion, not green through it as in the spring. Use fresh garlic or the stronges onion when it isn’t available.
*FOLK REMEDY: An onion cut in half left in a sick room will absorb the germs of the illness. I learned this from a real old timer who had lots of experience. Open a window let fresh air in and some sunshine in the sick room.
*Remember in during the flue or illnesses to use the fast, semi-fast or use mild foods which or any plant based diet. Animal protein stops elimination of toxins, use it not when sick. You have to assist nature in the process of healing by getting the debrey out of the area that's sick. Watch the tongue. When the tongue is white the liver is eliminating disease out into the blood stream. Diseases build up when this process is continually halted by too much animal protein.
*Colon: Keep bowels running with fenugreek and others herbs will work, watch the liver marsh-mellow herb and other herbs will work. Careful not to clog up the pipes (such as the stomach, bowel, kidney) assisting the body in its normal elimination process. Don’t forget the “w-holiest” approach is to drink lots of liquids, lemon aid, lime aid, etc. It just as important for the Kidney in this approach by treating the whole body and every major organ that keep your car running.

*Dr. John R. Christopher School of Natural Healing use to make up a similar formula. I've simplified it at time when needed: to brown the chopped onions in the oven low temp. and macerate them in ACV same amount of time lastly add enough honey to sweeten. I heard of a lady who hollowed out an onion then filled it will honey-vinegar and use it that way?.... His son owns the company now and may have discontinued the product. Check it out their web site I've referred to on the side. He still has his book on the market (Amazon.) Its basic book to have hand and rfor many other good herbal reference to your library. I have my old lessons books that I purchased from Dr Christopher before his son got into copyrighting his materials that I used today. *Enema or Laxative
*Approx. 1000 mg vitamin C each hour always with a full glass of pure water.
*Tonic teas: such as, Comfrey, Red Clover Blossom, Alfalfa Mint, and Horse Tail, etc.
Chest Cold, use lung herbs such as mullein, Lobelia etc. Also use when necessary; Vapor and Mustard Plaster
Nasal: Use a finger dipped in ACV in each nostril

ROASTED HOMEMDE KETCHUP RECIPE

Got tomatoes? Want to make them into home made organic ketchup? Planted a lots of Roma tomatoes and make them into ketchup! The other varieties can be used too however they do have more seeds, which can be strain through a sheave or even filter though cheese cloth. I didn't do this, it didn't bother me.© copyright 2006-11 by P T Sherman..
Slice, drizzle with olive oil and roast in a 400* oven until the vegetables are sort of pasty, and very done.
10 pounds tomatoes
3-4 sweet chopped bell peppers
4 onions
2-3 heads of garlic, peeled
•Peel the roasted peppers. Blanche in hot water then cool in cold and peel the thin skins off.
•You don’t need to peel the tomatoes, but if you don’t, the end product will have a little more texture than regular ketchup. (IF you don't like the texture then do strain....)
•Place all roasted veggies and all the other ingredients in a heavy bottomed stock pot and simmer for 20 minutes.
Other Ingredients:
1 cup cider vinegar
1 cup balsamic vinegar
1/2 cup white sugar or organic raw sugar
1/2 cup brown sugar or Rapidura i.e.
2 teaspoons kosher or sea salt
2 teaspoons ground pepper
1 teaspoon nutmeg
1 teaspoon celery seeds
1 tablespoon of fresh grated ginger
1 teaspoon of ground cloves
1 tablespoon mustard powder
dash or two of Worcestershire sauce
Watch the pot! It will scorch if the temperature is too high. Stir frequently.
After simmering for 20 minutes, remove the pan from the heat and let it cool for about 30 minutes.
Use an immersion blender on the veggies or hand blender i.e. and blend them up into a paste.
If the ketchup isn’t as thick as you’d like, return it to the heat and simmer longer.
After its blended up, bring it slowly back to a simmer, be careful not to burn it. It's ready to can. Strain seeds out, or not. (If you have a juicer this can work but I never did)
Pour into hot pint jars, add lids and rings.
This will make about 8 pints. You’ll need to water bath the pints for 15 minutes. This ketchup also freezes very well.

Ingredients;
1 can of drained black beans
1 cup of cooked brown rice
3 cloves of crushed garlic
1 diced onion
¼ cup of chopped, fresh cilantro (or, curly parsley)
2 eggs
1 tsp Chili powder
Salt and pepper to taste
Directions
Use a fork to mash half of the beans, leaving the other half un-mashed it makes for good texture. (In the stores brands they add in fresh corn blended on a quick pulse (just cut, not all) add in if desired?)
Stir in all remaining ingredients. Form into four patties. Either bake them in the oven at 375 degrees for 25 minutes or place in a pan lightly coated with olive oil. Only turn once when they are lightly brown on the edges. Be careful when you are turning them because vegetarian burgers do have a tendency to fall apart easily. ( One tsp flour or less or, corn starch can help if added while forming the patty.)
Cook on each side 4-5 minutes on medium heat in oven or on top of the stove in olive oil. These are cooked in olive oil which is most delightful with vegetables..
Serve with salsa red onion, lettuce, or fresh avocado. Place on a 100% whole wheat bun or just eat plain with lots of goodies piled on top!

FRENCH FRIES (Oven Baked)

Who doesn't like French Fry's? - This is a Oven-Baked version.
Try spicing med. sized potatoes up leaving them plain and fry up with olive oil, cayenne pepper; powdered - fresh garlic or rosemary!
I started making my own fries long ago, when I realized that grocery store french fries were not healthy produce for my children. If you can't read the label, pronounce some of the ingredients on the packages don't buy! They do have a practically no oil french fryer out. I haven't found who or where they are sold yet. For now, it maybe time to invest in a good knife! Also, when you spend 5 minutes cutting them yourself you save a lot of money. Potatoes tend to be pretty inexpensive! *1 medium-size potato for each person and then cut up 1 or 2 extra. (3 to 4 medium potatoes into wedges, skinny string style, regular fry shape?
*Spices: Garlic salt, All season salt or Sea salt (other spices suggestions are below.) Fresh milled pepper
*Olive oil or use non-stick baking olive oil spray (In a pinch; use safflower oil i.e.)
Slice up the peeled or unpeeled potatoes; spray a non-stick baking pan with olive oil spray.
Using a large plastic or another bag; place the fries inside and sprinkle seasonings into the bag. A bag; has a batch of 1-2 cloves of fresh crushed garlic, sea salt and pepper. In addition, add whatever seasoning you want like; Cajun, rosemary, cayenne pepper, etc! Seal the bag and shake until the fries seem evenly coated with spices.
Arrange on the baking sheet and spray the top of the fries with a light spray of olive oil spray. Cook at 400 degrees until either they are slightly crisp on the edges or becoming slightly brown. Depending on the size of each fry and the thickness
Time could vary from 20 minutes to nearly 60 minutes. Pierce with a fork to make sure they are done before taking them out, and as crispy as you like them.
Drain excess oil...If used; on brown paper bag or paper towel. Serve with Ketchup or 1/2 n 1/2 mayo and ketchup. (Can delude with some vinegar and sub. sour cream for mayo)
They are delicious and nutritious – not to mention easy. Leave the skin on? That’s where the fiber and most of nutrients are found.
If possible; DO buy organic potatoes a potassium rich food that we all should try to buy organic. The extra money you spend will still be less than if you bought bags of pre-made fries. Organic sweet potatoes also make super delicious french fries! With all of this potato cooking, you can see why week-ends are so “spicy” and fun, to look forward too...right?
