Gut Microsbiota To Improve Blood Sugars

Why diets do not have the same effect in different individuals has long been a mystery in the field of nutrition. Different studies in recent years have shed some light on the issue, highlighting the role gut microbiota plays in both the physiology and metabolism of humans.


In fact, it is known that the trillion microorganisms inhabiting the human colon modulate dietary interventions and can be an important environmental factor that contributes to the development of metabolic diseases such as type-2 diabetes, obesity and even cardiovascular conditions.

Furthermore, it is a two-way relationship, with food altering bacteria and bacteria affecting the metabolism of food.
Now, a new study by scientists from the Sahlgrenska Academy at the University of Gothenburg demonstrates which bacteria are responsible for some of these effects. Published in Cell Metabolism, the authors show how the bacteria Prevotella improves glucose metabolism in healthy human subjects. Prevotella is linked with a high fibre intake, whereas Bacteroides, for example, is associated with an elevated consumption of protein and fat.
In an experiment with 39 individuals, the scientists put the subjects on a diet that included eating barley bread for three days and then, following a break, consuming white bread. They measured glucose and insulin responses to the diets and observed how in most participants, the barley bread was linked to an improved response in terms of sugar control compared to white bread.
Nevertheless, the level of improvement in some individuals was much clearer than in others.
The authors of the study measured the gut microbiota of every subject and observed how it changed in the individuals who had the most positive response to the dietary intervention, showing a higher proportion of Prevotella. However, the opposite effect was observed in individuals who had responded least to the barley bread intervention.
“Our findings clearly show the importance of the interaction between gut microbiota and diet and contribute to our understanding of metabolism in health and disease. The results may help to explain why responses to different dietary treatments are so individual,” co-author of the study Professor Fredrik Bäckhed from the Sahlgrenska Academy, University of Gothenburg said in a statement

To confirm their results, the scientists carried out a second experiment, this time with rodents. They transplanted either faecal microbiota from the individuals who showed a positive response or Prevotella probiotics to germ-free mice and observed how the rodents improved their glucose metabolism and increased their Prevotella levels.


The link between the gut microbiota and various dietary fibres could help develop more individualised dietary guidelines. In fact, this study shows that Prevotella is crucial for digesting complex fibres and this may stimulate and improve the body’s glycaemic response. In this respect, several recently published papers support the idea that Prevotella is a critical bacterium for healthy microbiota.
“Our results also show that control of blood sugar improves in mice supplemented with Prevotella if they are given a high-fibre diet. Our findings could lead to a combination product with Prevotella and fibre from grains,” said Bäckhed.

Pickled Veggies: Why Your Health Depends On Them

Even though I’m not Korean, I grew up in a home that always had kimchi around. Which is not at all common for a Filipino household. But my mother happened to have a recipe of that favorite  delicacy of our Asian neighbors, and she enjoyed preparing it during the cool months of December to February, when fresh vegetables would come down from the northern mountains of Luzon to the capital of Manila, cheap and plentiful.
I would see huge jars of Chinese white (napa) cabbage, radish, cucumber, carrot, scallions, peppers and ginger, all sliced, mixed together and soaked in brine, sitting on our kitchen counter to pickle for a few days. All the while my dad would ask during mealtimes, “Is the kimchi ready yet?” hoping he’d get a yes and be allowed to have some of that pungent yet deliciously sour, spicy relish.
I never did enjoy kimchi or any other pickled vegetable at the time. I only started eating them as an adult and would look for kimchi when eating dishes with thick sauce like chicken, pork or fish in tomato sauce. I also grew to appreciate atsara (pickled green papaya), which is often served in the Philippines alongside barbecued chicken.
Now, with the increasing popularity of probiotic foods, from kefir [1] to kombucha (a fizzy drink of fermented black tea), I and many others who enjoy healthy eating are becoming more and more intrigued by the benefits of pickled foods.
Pickling and Fermentation Explained
Pickling and fermentation are ancient food preservation methods used as early as 5000 years ago. They were used to make food last through the winter months, and brought along on voyages around the word, especially by sea. Captain Cook was said to have used sauerkraut to prevent scurvy among his sailors.


Simple pickling involves the use of brine or an acidic solution like vinegar. From cucumbers, the most common type of pickled vegetable, to meats and fish, pickled foods usually have a salty or a sour, tangy taste — or both. Most commercial pickles we buy in grocery stores today are processed in high heat and pressure, though, killing all live bacteria present. They’re also added with a chemical preservative called sodium benzoate (or EDTA) to make them shelf-stable. These pasteurized, mass-produced pickles are usually bereft of the nutritional value.
Fermentation pickling, however, involves “self-preservation” of foods using brine and their very own preservation agents: the naturally occurring yeasts, molds and lactobacilli — the good bacteria found on the surface of living matter. As the food ferments, an organic byproduct called lactic acid is released along with digestive enzymes, Omega-3 fatty acids, B vitamins and immune chemicals that repel pathogenic bacteria including cancer cells. These are what make them probiotic.
Fermented foods that do not go through pasteurization retain these live microorganisms, thereby being given the nickname “living foods.” Some of the best-loved, age-old examples of traditionally fermented foods are wine, beer, cider, vinegar, yogurt, seasoned and well-aged cheeses, sourdough, chutneys and miso. In the case of alcoholic drinks, the sugars in fruits and grains are fermented using yeast rather than bacteria – juice becomes wine; wheat and barley become beer.

Pickled vegetables, when traditionally fermented in brine and lactic acid and not pasteurized, are probiotic.These are the olives, capers and sauerkraut we find at delicatessens or the refrigerated section of health food stores (not the shelf-stable variety in the middle aisles of grocery stores), or the kind that is prepared at home.
Dead Food vs. Live Food
Food writer, journalist and activist Michael Pollan says public health is obsessed with the fight against bacteria [3]. “But 99.9 percent are benign, and a great number of them are also in a symbiotic relationship with us. They help us, and we need them,” he told the Daily Mail.
The problem with the modern, Western diet today is that dead, heavily processed foods have overtaken live, enzyme-rich foods. Antibiotic-laden meats, cooked vegetables, pesticide-sprayed fruits, pasteurized milk, anti-nutrient-filled grains. Even water for drinking is chlorinated, fluoridated, distilled or filtered. Everything is sanitized, and all bacteria – good AND bad—are dead.
Effectively, our guts have lost the beneficial bacteria they need to properly digest and absorb the nutrients we ingest. Fermented [4] foods expert Sally Fallon suggests that despite ubiquitous sanitation, “Could it be that by abandoning the ancient practice of lacto-fermentation, and insisting on a diet in which everything has been pasteurized, we have compromised the health of our intestinal flora and made ourselves vulnerable to legions of pathogenic microorganisms?”


Indeed, a combination of bad diet, stress, antibiotics and other factors can create an imbalance of bad bacteria, according to acupuncture and oriental medicine expert Grace Suh Coscia. These can cause fatigue, diarrhea, inflammation, headaches and strong cravings for sweets.
This bacterial imbalance, called dysbiosis, is common in Western society thanks to diets high in sugar and meat, but low in probiotics, says the wellness website Akealife.com. Dysbiosis encourages yeasts and putrefactive bacteria to flourish, instead of fermentative beneficial bacteria. In turn, toxins build up and damage the lining of our intestinal wall. Other side-effects are inflammation of the gut and leaky gut syndrome, leading to conditions such as Crohn’s disease, ulcerative colitis, and irritable bowel syndrome (IBS). Allergies, systemic candida, eczema, autoimmune disease, arthritis and even mental illness have all been linked to dysbiosis.
Lacto-fermented foods, with their active cultures of good bacteria, can populate and bring back the balance of friendly flora in our guts. Alison Clark of the British Dietetic Association told the Daily Mail that 70-80 percent of our immune cells are in the gut [3]. “Fermented foods stimulate bacteria that help with immunity. So for someone who suffers with lots of coughs and colds, they could help. We also know that a food that’s high in probiotics could help control the symptoms of things such as bloating, IBS and flatulence.”
Fermentation breaks down the complex carbohydrates, proteins and fats of food and turn them into simple substances that are much easier for our stomachs to digest. They also improve the digestibility of even the cooked foods that are consumed along with them.
The website Green Med Info lists over 100 articles and studies that cover more than 170 illnesses being helped by probiotics, including everything from allergies to heart disease, dental carries to obesity.
How to Get Probiotics in Your Body
One to three servings of fermented foods a day will get you on the right track to better health.  Incorporate them into your diet whenever you can. Opt for sourdough bread rather than regular bread, go for yogurt, kefir or raw milk instead of regular pasteurized, and reach for kombucha in place of soda or plain tea. Use naturally fermented condiments like lacto-fermented ketchup, salsa, non-GMO soy sauce and Thai fish sauce.
You don’t even have to buy them all the time, it’s easy enough to make them yourself.  You can prepare sauerkraut in your kitchen with just cabbage, salt and water; ketchup and salsa if you have a surplus of tomatoes and peppers and kimchi if you have an abundance of different veggies.

NO BAKE; TROPICAL CHEESE CAKE

Generally speaking, I don't do cheesecake, but I will make an exception to this one because it is, not too sweet, healthy and very good! The cream cheese is not baked so not to lose the “probiotic'” properties of the cream cheese. Heat and freezing effect the probiotic in ice cream or any kind of cooking. You do get the protein.
Ingredients;
First, put together the following,
1 Tb. of Knox Unflavored Gelatin with 1/4 cup of water and set aside
Soften gelatin in water in small saucepan; let stand 1 minute. Cook on low heat 5 minutes or just until gelatin is dissolved, stirring occasionally.

Second;
2 pkg. (8 oz. each) Cream Cheese
3/4-cup sugar
1 tsp. grated lime peel
1/4-cup line juice
Few drop green food coloring or green Jell-O, enough to turn green. (All are optionals that I didn't do.)

1 8 oz. Cool Whip Topping, thawed
Beat cream cheese and sugar with electric mixer on medium until well blended. Add dissolved gelatin, lime peel, juice and food coloring; mix well. Gently stir in whipped topping; pour over crust.

The Bottom Crust
Did you know coconut is an ant fungal? Here's a recipe for the bottom layer. You can also buy a gram cracker crust or make one.
1 cup shredded coconut (fresh as possible)
2 Tb flour
2 Tb organic no hormonal butter or margarine ... melted
Mix coconut, flour and butter. Press firmly onto bottom of 9 in spring form pan. This part is baked at 350 for about 12-15 min. or until very lightly brown. (Watch)
Refrigerate several hours or until firm. When ready to serve, run knife or metal spatula around rim of pan to loosen cake and remove rim of pan.
Serves: 12
* To soften cream cheese, place completely unwrapped packages of cream cheese and set out to soften. To heat in microwave defeats the purpose of this recipe, it needs to be active, to stay a active culture.

YOGURT STARTER AND ITS CHEESE

Homemade Yogurt and Cheese
Home Made Yogurt Seventy percent of the immune system is in your digestive track. The obvious answer to good health and weight-conscious individuals is plain unadulterated yogurt which can be sweetened with fresh fruit. And is easily made "our way" at home. Your can start with any type of milk-cow, goat, sheep, camel, water buffalo, yak and even mare's. To your milk add the yogurt culture starter that you have bought at the health food store (1 tsp. to a quart, directions on package) Or at (Chr. Hansen's Laboratory, Inc. 9015 W Maple St., Milwaukee, Wisconsin 53214) Or, use 3 TBS. of a good bacterial commercial yogurt to one quart of milk. Stir the mixture a bit and then pour into a glass container with a cover. (You can use a one quart Mason Jar, or smaller.) Don't fill the jar to the top. Put the jars into warm water in a large stew pot and put the pot in a just-barely turned on oven, (warm water covering the bottom of pan) set to cool side of the "warm" setting. Some ovens can be left on the "off" position and the pilot light provides enough warmth. It should stay at about 110 - 115 degrees for a three hours. (5 degrees above or below can make the difference in taste) (Preparing with the same idea as for yeast_in breads) Or, use a crock pot on low with water, turn pot off, then add pint jars of yogurt, put lid back on the crock pot for about three hours and refrigerate. If the yogurt over heats use anyway in cooking, especially pancakes (in blog) Yum! If your oven isn't stable, then perhaps you kitchen sink will do: just surround you jars with warm water which you can change from time to time as it cools. You can also put the milk and culture into the top of a double boiler, over water that keeps it to the right temperature, hot but not boiling. (use a candy thermometer) And you could use an oven light (100 watts), heating pad, crock pot on low, pan of water in electric frying pan, or buy a professional one usually from the health food stores or on line. If you have a casserole, then wrap it up in a warm woolen blanket or sweater and leave it overnight. The number of hours the process takes varies with the amount of culture you've put it in, the temperature that's maintained, and the weather conditions. Keep testing the yogurt until it reaches the consistency you like (for thicker you can add 4 T. powdered milk to a gallon of milk) If the yogurt has been pasteurize that you got your start from, may not work if it doesn't have a live culture in it. When the yogurt is the consistency of creamy custard, whisk it out of the warmth and put it into a cool place. It may take 3-7 hours in fridge to reach the proper consistency. If you leave it in the warmth too long you may get a cheesy texture. And the longer it sits, the tartar it gets. When finished, yogurt behaves just about like milk but it's actually better behaved because it's impossible to curdle, sour, or clabber it. You can whip it and the thicker the better for that. You can liquefy it and make cheese out of it. (There are some recipes for this on the Internet)
However...when you cook, bake, or heating yogurt you are destroying its beneficial bacteria Lactobacillus, Streptococcus (and too, get your starter from as many bacteria as possible). Yogurt Cheese: Yogurt cheese is firmer and creamier than yogurt because much of the water has been drained off. Use it to top baked potatoes and fresh or cooked fruits. It's also an excellent spread for toast and bagels. Check well-stocked food stores for yogurt without stabilizers. Yogurt with such additives cannot be drained as thoroughly.
USE: 1 pint plain yogurt Special Equipment: cheesecloth Line a strainer with cheesecloth. Place the strainer over a bowl. Pour the yogurt into the cheesecloth and leave covered and refrigerated for at least 8 hours, or overnight. Discard the liquid in the bowl. The yogurt remaining in the sieve is yogurt cheese. Use in recipes. Or use the home made yogurt here. Yield: about 1 1/2 to 1 3/4 cups and 4 cups yogurt will yield about 2-2 1/2 cups.

Kim Chee (Pickled Cabbage) Probiotic's

Kim Chee (Korean Pickled Cabbage) PRO=BIOTIC veggies (Colon food)
 

Kim Chee (Korean Pickled Cabbage) Like our sauerkraut
Yields about 1 quart
2 lbs celery cabbage (Chinese Cabbage)
½ cup coarse salt
1 ½ Tbs. crushed red pepper flakes
1 clove garlic, finely minced
1 tsp. minced fresh ginger
1 Tbs. sugar
1 scallions, finely chopped

1. Rinse cabbage in cold water and drain.
2. Cut into 1½ pieces.
3. Sprinkle with salt
4. Add; 1 quart water and let stand overnight
5. Next day: rinse cabbage in cold water and drain.
6. Using a wooden spoon, blend remaining ingredients and stir into cabbage pieces.
7. Pack into jars and cover.
8. Place jars in plastic bags to prevent odors from spreading to other foods.
9. Refrigerate and let stand 4-5 days to cure.
In some countries they bury this for winter, in a container, and dig it up when aged and soured.
