Plantain is a useful herb that is often considered a weed by most people.
It is native to Europe and parts of Asia, but was said to have been introduced to North America when the settlers came from Europe. It’s scientific name is Plantago Major, and it likely grows in your yard.
The leaves are actually edible and somewhat similar to spinach, though slightly more bitter. They can be used in salads or other culinary uses.
We dry and freeze the leaf from our yard and I also order it in bulk from Mountain Rose Herbs, as I like this company (organic or wild). The all around salve is easy to make and get the recipe here on YouTube.

Herbal UsesProperties: Mucilage, Glycosides, Tannins, Silica, Vitamins C, K, Minerals.
Values: Cooling, Detoxifying, Demulcent, Astringent, Wound Healing, Decongestant, Expectorant, Antiseptic, Diuretic.
Blood: plain plantain tea is one of the best cleansers to remove toxins from the blood.
Colds: it's an excellent tea for people with allergies or asthma who are allergic to cold medication and very congested. It's fast acting! Stay with plantain tea until the congestion is completely cleared and you'll feel better than you did before the cold.
Deobstruent: unclogs passageway, particularly lung and liver obstructions (imbedded phlegm).
Hemorrhoids: take a sitz bath in plantain tea for fast relief. Also take the tea internally to treat the problem inside and out.
Lungs: particularly valuable for the lungs, to fight infection and remove phlegm. It's a time- honored remedy for weak lungs and coughs from lung disorders.
Prostate enlargement: helps detoxify tissues; dries, cools, cleans passages; reduces inflammation. It has been used to treat prostate enlargement.
Spastic Colon (Colitis): soothes and reduces pain, spasm, inflammation; detoxifies the colon; promotes healing. Take as a tea.
Skin infection: stops the spread of skin infections such as scabies, ringworm, shingles (a strain of herpes). Use plantain tea as a skin wash or in a bath for hard- heal skin infection.


The leaves can also be made into a tea or tincture, and this is said to help with indigestion, heartburn and ulcers when taking internally.
After it seeds

Externally, Plantain has been used for insect and snake bites, and as a remedy for rashes and cuts. I use it in making my Homemade Healing Salve, which we use as a natural antibiotic ointment on cuts and bruises.
Its natural antibacterial and anti-inflammatory properties make it great for speeding recover of wounds, and for itching or pain associated with skin problems. A tea made from the leaf leaf can be sprayed on mosquito bites to ease the itch. (This herb would be good for the new mosquito plague)

Plantain has been used as a panacea in some Native American cultures and with some very good reasons. Many of its active constituents show antibacterial and antimicrobial properties, as well as being anti-inflammatory and antitoxic. (It's keys for the success of boils on bottoms) The leaves, shredded or chewed, are a traditional treatment for insect and animal bites and the antibacterial action helps prevent infection and the anti-inflammatory helps to relieve pain, burning, and itching. There is some investigation ongoing to study its affects on lowering blood sugar.
When we are bitten by mosquitos, stung by bees, or come in contact with spiders or other insects, I use a salve containing plantain leaf (or just chew the leaves and apply to the bite) to help ease the reaction. I also used a this salve and and a poultice of the leaves when my son was bitten by a brown recluse and continued this daily for about 2 weeks and his skin never decayed at the bite.
A tea, tincture or salve made with plantain also greatly eases the itch of poison ivy, oak, or sumac and I keep it on hand for this reason.
A tea or infusion of the leaf  can be poured into the ear for ear infections (as long as the ear drum has not burst) to ease the pain and shorten duration of ear infections.
There is unconfirmed information that a strong tea of this herb, taken internally, can help protect the body from the effects of chemotherapy and that a strong infusion can improve blood sugar. While taking plantain in these situations would generally be considered safe, one should still check with an attending physician before doing so.


I've also make a lotion with plantain, calendula and coconut oil and it is extremely helpful for any skin irritation, including mosquito bites, eczema, psoriasis, chicken pox, rashes and sores.

Where to Find

Most people are able to find this common herb in their own yards. If you live in an area where your yard is sprayed with chemicals or fertilizer, organic dried leaves can also be ordered online. If you prefer pre-made remedies, there are: plantain leaf first aid ointment for kids, plantain tincture, and plantain and goldenseal pre-made salve (its a natural Neosporin). If you can’t find Plantain in your area, you can actually order the seeds to plant Plantain (though your neighbors might think you are crazy!)

Plantain Precautions

Plantain is good for injuries because of its coagulating properties, but those with blood disorders or prone to blood clots should not use Plantain internally. If harvesting it yourself, make sure to get from an area that has not been sprayed with any chemicals or pesticides and make sure that you have correctly identified the plant before consuming.

Physician and nutrition expert Dr. John McDougall argued that if people switch to a near vegan diet, high in starches such as wheat, rice, corn, and potatoes, they will actually be healthier, and able to lose excess weight. The increase in obesity and illnesses such as diabetes and heart disease are due to a diet of rich foods like meat, dairy, oils, and sugar, he suggested. The Pritikin Diet (similar to McDougall's Diet), popular in the 1970s, was fought against by the meat and dairy industry, who used lobbyists and other means to push their products as healthy to consume, he continued.
The low carb diet, such as Atkins, and newer variations like Wheat Belly and Grain Brain recommend the opposite to the McDougall Diet, telling people to eat meat, dairy, eggs, and oil and to not eat wheat, rice, corn, and potatoes. They take a little bit of truth-- that sugar is bad for people and exaggerate it, he said. "Just because sugar isn't good for people, doesn't mean that potatoes are bad for people, or bread is bad for people...These are traditional foods...your grandma and grandpa ate these foods, worked hard in the fields, went to battle on these foods. Why all of a sudden have they become evil foods?," he asked. McDougall cited how one of his patients, Olympic athlete Carl Lewis, followed his diet, and set the world record for the 100 meter dash. He also noted that ancient gladiators were vegan. "Why do you think the gladiators lived on barley and beans, and not meat? EASY CHOCOLATE FUDGE, no cook recipe

GREAT CHOCOLATE FUDGE FOR THE HOLIDAYS.
Their's no decent candy in the markets. Good candy making can be done simply and quickly at home with good ingredients, and no corn syrups i.e..

This makes about 2 lbs of fudge
2 cups (12 ounce package) of Hershey's, or German semi-sweet dark chocolate chips
1 1/4 cups (14 ounce can) sweetened condensed milk
1 cup chopped nuts (optional) (or, USE only a handful for taste)
1 teaspoon real vanilla extract
Combine choc. chips, sweetened condensed milk in microwave or saucepan. Warm over lowest possible heat, stirring until smooth. Remove from heat, then stir in nuts and vanilla. Spread evenly into foil-lined 8 to 9 inch square pan. Chill for 2 hours or until firm. Lift from pan and remove foil.
*Line the pan with a handful of nuts, or lay them on top for presentational effect, especially if nuts are not desired. (They can easily pick them off)


*If you use the microwave don't completely melt the choc chips. Take the fudge out of the oven and finish stirring the choc. chips until all are melted.

This is the easiest best tasting fudge ever...

Nut lovers will enjoy this delicious sugar free low carb chocolate walnut fudge. It has the consistency of real fudge and is loaded with chopped nuts, or leave out. If I give it away I put a  handful of nuts on the bottom, not top, so the ones who don't like nuts can pick them out.
Ingredient
8 ounces unsweetened baking chocolate DARKER KIND
1/2 cup water
1/2 cup heavy cream
2 scoop (46 grams) natural whey protein powder
1 teaspoon vanilla extract
1 cup chopped walnuts, divided
Instructions
  1. Line a small rectangular dish with parchment paper. I used an 8x8 baking dish.
  2. In double boiler bowl, over pan of simmering water, melt together baking chocolate, condensed milk mix, water, heavy cream, and Swerve sweetener.
  3. Remove bowl from heat and add stevia, whey protein powder, and vanilla.
  4. Fold in 2/3 cup of the walnuts.
  5. Spread fudge mix into prepared container. Press remaining 1/3 cup nuts on top.
  6. Cool fudge in the refrigerator until firm. Cut into squares. Store leftovers in airtight container in refrigerator.

Southern Corn Bread (No Flour recipe)

This is a recipe I use when if want an all corn taste or craving Frito's corn chips. This company Frito-lay is behing the no labeling laws, so I boycott their products. Pop corn is a good untreated corn.
Southern Corn Bread (no flour recipe)
2 farm eggs
2 cups buttermilk or 1 c. buttermilk and 1 cup organic milk (If out of butter milk use 1 cup yogurt, as it will keep this moist.)
1 tsp. baking soda (1 tsp. baking powders the no aluminium kind.)
2 cups white organic cornmeal (or yellow) or use popcorn refreshingly ground.
1 tsp. salt
1 Tbs, sugar or honey

Heat oven: 350, Cast iron skillet is excellent to bake cornbread, or generously grease a 9 x 9 x 2" pan.
Liquids: Beat organic eggs and add buttermilk, if using honey add in.
Dry Ingredient: In bowl stir together baking soda, cornmeal, sugar and salt. Add liquid mixture all at one time; beat with mixer until smooth and pour into your HEATED pan. 20 - 25 minutes, or just until set. (top will bounce back when touched) Serve hot and with organic butter or margarine or honey. About 9 servings.
Corn syrup naturally comes from GMO corn as well as corn oils. The problem is all USA corn is GMO. It's fattens up pigs. Exceptions are pop corn, some organic corn, and purple i.e. corn has not yet been polluted because it's not profitable yet to Wall Street. Make corn bread with freshly ground pop corn not boxed etc.

Black Beans
During any emergency time, the ability of your body to properly digest and pass food is severely hampered due to not only stress but varied food intake. The key here is how black beans can actually facilitate and maintain proper intestinal transit time thanks to the special fiber contained in the beans that produces what is known as butyric acid. In addition, the beans contain a multitude of antioxidants, folates, protein, minerals, and of course B vitamins.

Also high in protein, fiber, and other important vitamins and minerals, rolled oats are great in emergency situations due to requiring little cooking. You can cook them or simply soak them for 20-30 minutes prior to eating.

Green Lentils

Lentils are particularly rich in magnesium and potassium - two important minerals for improved health. Magnesium is especially helpful for diabetes and cardiovascular health, while potassium is crucial for helping cells to absorb nutrients and release waste. Like rolled oats, lentils can also be soaked to eat. Soak overnight, then rinse twice daily for a few days until they sprout.

Quinoa

Zuke Lasagna Casserole



  This lasagna recipe can have egg plant instead of the Zuke

Ingredients

  • For the Tomato Sauce:
  • 1 - 28 oz can of crushed tomatoes (or about 4 pounds of fresh tomatoes)
  • 1 large garlic clove, minced
  • 1 Tbsp. fennel seed, crushed slightly to release the flavor
  • 1 tsp. ground oregano
  • 1/4 cup finely chopped basil
  • 1 tsp. cane sugar
  • 2 Tbsp. olive oil
  • For the Cheese Filling:
  • 1 pound of ricotta cheese (or cottage cheese)
  • 1 cup grated parmesan cheese
  • 1 egg
  • Salt and Pepper to taste
  • For the Vegetables:
  • 2 to 3 medium-sized zucchinis, no bigger than 4 inches diameter (or 4 to 5 small zucchinis)
  • 2 tsp. salt
  • 3 Tbsp olive oil
  • 1 pound of mushrooms, sliced
  • 1 bunch of Swiss chard or spinach (about 4 cups, chopped) or, Kale
  • 1 large onion, minced
  • 2 Tbsp. flour (can be gluten-free flour)
  • A dozen or so fresh basil leaves (optional)
  • 4 cups shredded mozzarella (about 1 pound)

Directions

  1. Wash and remove the ends of the zucchinis. Slice the zucchinis lengthwise to between 1/8 to 1/4 inch thick. Use a mandolin if you have one, it will help you slice the zucchini faster and in perfect consistent slices. Otherwise, slicing with a knife is fine too. Sprinkle the 2 tsp of salt on the zucchini as you go and allow the zucchini slices to sit in a colander or for about 30 minutes. After 30 minutes, run two fingers on either side of the slices, squeezing all the way down over a bowl or the sink, releasing even more water. Place the slices on a clean towel and pat the zucchini very dry. Rub 1 Tbsp of olive oil onto an extra-large baking sheet (or 2 smaller ones) and place the zucchini slices in a single layer. Roast in a 375F oven for about 10 minutes. Allow to cool.
  2. If using fresh tomatoes, deseed the tomatoes (if you wish remove the skins). Bring the tomatoes to a boil and add the minced garlic, chopped basil, crushed fennel seeds, ground oregano, olive oil, sugar, and salt to taste. Simmer until thick and reduced (may take up to an hour). It's important to use a thick lasagna sauce in this recipe because the lasagna can otherwise be on the soupy side without the pasta to soak up the extra liquid as it bakes.
  3. In a large skillet or wok, heat 2 Tbsp olive oil and sauté the onions for 3 to 4 minutes. Add the mushrooms and continue cooking. Once the mushrooms are soft, add the chopped swiss chard. When the chard is cooked, remove from heat and drain any juices (save these for great soup stock). Add 2 Tbsp flour to the mixture and mix well to incorporate.
  4. Oil a 9 x 13 inch lasagna dish and spread about one third of your sauce on the bottom. Add a layer of roasted zucchini to cover the tomato sauce. Add the ricotta and parmesan cheese mixture and spread evenly. Add another layer of zucchini slices. Add a second round of tomato sauce and spread evenly, followed by the vegetable mixture and half of the shredded mozzarella cheese. Add a last layer of zucchini slices followed by the third and last round of tomato sauce. Place the twelve basil leaves on top of the sauce and sprinkle the rest of the shredded mozzarella on top. Place a baking tray on the rack beneath the lasagna pan to catch any bubbling juices from falling to the bottom of your oven. Bake for about 40 minutes at 350F until the cheese is melted. If you wish, turn on the broiler on high for the last 2 minutes to brown the cheese slightly. Allow to sit and cool for 30 minutes before slicing.
Yield: 10-12 servings

No Yeast Bread (Self rising)

SALT-RISING BREAD (pioneer recipe, and this is a basic "keeper" recipe)

The night before you wish to do your baking:
Use a pint jar in which you will put 8 tablespoons of cornmeal (the original recipe measures this in inches high, but it will work out to about 8 tablespoons.) The grist mill ground is best because it is ground much slower and doesn’t “burn” the heart of the corn. Add a pinch each of salt and soda, along with just enough sugar to fill the palm of your hand. This works out to be about 1 teaspoon. Then fill the jar with “scalding” water. Stir well. Cover with a lid and let stand overnight in a warm place (the old recipe says to wrap first in a towel and then place in a paper bag, but the point is to keep it very warm and out of a draft. In later years, the cook would place this concoction near a hot air register to keep it warm.)


The next morning, take 1 quart of milk (or you can use 1/2 milk and 1/2 water), combine the starter with 1/2 teaspoon salt and add enough “plain” (all-purpose) flour to make a stiff batter. (I found this to be around 4 cups.)


Stir well. Cover the batter and place the entire bowl in a container of warm water (just warm enough to put your hand in it.) Try to hold the same temperature by setting this in a warm place.  You will likely have to drain some of the water off and replace with warmer water on a continuing basis. Try not to make any drastic change in the temperature as you are adding the warmer water, change only a small amount of water at a time to hold the temperature as constant as possible. It will take 3 to 4 hours to rise. (If it is very slow in rising, you can stir it again, then place the bowl back in the warm water.)


When the dough rises, combine;
 1 teaspoon salt
3 to 4 tablespoons of shortening (butter or lard says the old recipe)
 flour enough to make a stiff dough. Then knead for 10 minutes.


Shape into 3 loaves. Grease the sides of the loaf pans well with butter, then place the loaves in pans and let rise until they are doubled in bulk. This is usually about 45 minutes to 1 hour.
Bake at 375 degrees for 30 to 40 minutes. When the bread has finished baking, grease the crust heavily with butter as soon as you remove from the oven.
Note: the instructions were not specific as our recipes are today, (method)  and it may take more than one try to get it right, but the results are worth it!

Gold-Doped Graphene Wrist Strap Could Help Manage Diabetes Without Needles


For many diabetics, life is managed one insulin-filled syringe after another. But if an new experimental wristband is further refined, they may be able to ditch the needles for good.
The device is a clear rubbery band embedded with sinuous traces of gold and gold-doped graphene drug delivery system and sensors. It senses changes in the wearer’s sweat and, on a wirelessly connected device like a smartphone, correlates that with changes in blood glucose level. When necessary, it delivers a dose of the drug metformin, which primarily suppresses glucose production in the liver, via an array of microneedles.

Details of the new device were published this week in the journal Nature Nanotechnology.
Since the changes in a person’s sweat lag glucose fluctuations by 15-20 minutes, the device is only suitable to daily ebbs and flows of insulin levels. At this point, it also cannot handle incidents of hypoglycemia, or when a person’s blood sugar levels are too low.

The researchers proved that the system can normalize blood sugar in lab experiments on animals. However, though the device has administered metformin to human subjects, it didn’t supply very much of the drug.
Though the device’s capabilities are relatively limited, it has “moved the field closer to this coveted prize” of non-invasive glucose monitoring and management, wrote Richard Guy in the same issue of Nature.
