My daughter uses some of the flour 1/4 cup in place of almond or coconut flour to give them more fiber and natural oil.
3/4 cup margarine or butter
1 3/4 cups flour (oat flour taste better)
3/4 cup brown sugar (or dates sugar i.e.)
1/2 cup granulated sugar
1 egg
1 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. baking soda
1/4 tsp. cloves
1 tsp vanilla
2 cups rolled oats
1 cup finely shredded carrots
1/2 cup raisins (optional)
In a mixing bowl beat margarine, or butter with an electric mixer on medium to high speed for 30 seconds or till softened. Add about half the flour, brown sugar, sugar, egg, baking powder, soda, spices, and vanilla. Beat till combined, scraping sides of the bowl occasionally Beat or stir in remaining flour. Stir in oats, carrots and raisins.
Drop dough by rounded 1/8 inch ice cream scoop or rounded teaspoons 2 inches apart onto the un-greased cookie sheet. Bake in 350 oven for 10 to 12 minutes or till edges are golden. Remove from cookie sheet and cool on wire rack or paper towels. This make about 4 dozen (teaspoon)
