RICE SALAD



I love rice and it is now more acceptable for veggie diets. Yes, some meat could be added and/or other chopped fresh garden veg. that maybe on sale that week. Cukes are good in this recipe. Season this to taste and use fresh green herbs such as curly parsley, chives i.e. or, sliced olives' is great replacement for the salt.
Rice Salad (METHOD RECIPE, MORE OR LESS I.E.)
3 cups cooked brown rice (chilled)
1 cup cooked corn kernels or frozen peas or another like mixed veg.
1 cup chopped celery
1 cup chopped almonds
1 cup grated carrots
3 green onions finely sliced, or purple onions finely chopped
2 tbs. sesame seeds
One-fourth cup raisins, is optional
Directions: After cooking rice, place in refrigerator. When rice is chilled, toss.
Place the rest ingredients in salad bowl along with the dressing of your choice. I use vegenaise and Dijon mustard with a little olive oil) Have Fun!
These recipes taste so light and refreshing. None of them will leave you feeling heavy. There fun to make too.
Variations: If you have any left-over do a wrap; add drained white beans i.e. I've added left-over packaged salad mixes in the wrap with some avocado, tomato or salsa...
