Sandwiches spreads from leftovers
Leftover sandwich Spreads
This recipe is adapted for vegetarianism or you can change this to simply adding most anyvegetables instead of meat. Avocados, mushrooms, tomatoes, hummus are some of my favorites.
In the holidays we have a lot of leftovers Especially
• Chopped meat (baked chicken, turkey, beef, ham, Spam, hot dog, tuna, cold cuts, 6 eggs or even cooked organic tofu);
• Smaller chopped onion or green onions or fresh chives for color, + nutrients. Presentation is everything.
• ½ to1 stock small chopped celery
• Fresh, bit of parsley
• Salt and pepper to taste
Onion
.......
• 2 tbls + mayo (enough to hold it altogether)
• abt 1 tsp. mustard (optional, except for the egg salad)
One small dill Pickles finally chopped
Or, 1 tbls pickle relish or pickle (optional)
• Chopped Romaine Lettuce or Watercress
• Whole wheat bread, Low carb bread are available now,pita, High fiber,whole wheat wraps
The ratio of measurements to ingredients depends on how much food using and, many in your serving 4-6-8 etc.
This is about 4 servings per 2 cup meat. This is a great way to use leftovers and especially meat you don’t really care for dark, light, neck, tail end etc. ,
Have a handy small food chopper that can pulse the meat to desired constancy (don’t over pulse unless you want it for a fine spread for crackers i.e.) (meat +vegetables can be chopped put in baggies and do later I do this all the time)
First chop up the vegetables in a food chopper or a blender on pulse and a pickle if you don’t have relish.
I also make this same recipe up with 6 boiled eggs for egg salad using the same ingredients except for of course the meat
Instead of humus you can add chickpeas and mash them up they work out great.
I like fried potato sandwiches with a bit of onion Yum with Mail.
Post Notes: Adding in Blk beans to your wraps. Rinsed cooked black beans can be added to the whole wheat wrap, diced up a tadd salsa.

Zucchini vegetable patty that taste very good even if you do not like zucchini's.
- 2 c. chopped zucchini (abt. two sm. or one lger.)
- 1-2 Tb Chopped onion
- One graded carrot (shredded)
- 1 egg (binds it together) (optional: You can sub.Flaxseed flour as an egg or added fiber.)This will (look like a hay stack, don't turn them over util brown on one side
- 2 T. flour (coating all Ingredients) Depends on how much you have 1 tablespoon might do if you save a small amount just coat the zucchini
- One to 1-2tea salt and Pepper to taste
- Oil;Mix the patties together, frying in a good oil such as olive oil-mono oil, like safflower, then flatten All the patty out to your desired thickness.
- You can also bake these in the oven which I did when I added too much liquids! they didn’t turn out so well I just Turn them over in the oiloil and thenFinish baking themin the oven I liked him actually.
