HONEY CAKE
2 cup pastry flour (1/2 whole wheat or, almond flour)
½ tsp. salt
1 tsp. baking soda
¼ cup safflower oil (or, coconut oil)
½ cup honey
1 tsp. vanilla
1 egg
½ cup milk
Sift together dry ingredients. In medium bowl; Combine oil,
honey and vanilla, beat egg and stir into honey mixture. Add in dry ingredients
alternately with milk (or alternatives to dairy) incorporate well. Pour into
oiled 9x9 inch pan.
Variations before baking; ½ cup
coconut, nut meats, raisins or berries
Topping; 1 cup juice or, water,
2 Tbsp. arrowroot, ¼ cup honey, 2 cups fruit
Combine all but fruit. Heat over
medium heat (boil one minute) remove, add fruit and cool
