HIGH PROTEIN FUDGE RECIPES

GREAT CHOCOLATE FUDGE FOR THE HOLIDAYS.
Theirs no decent candy in the markets. Good candy making can be done simply and quickly at home with good ingredients using no corn syrups, fake sugars or preservatives, i.e.
Cream instead of milk and or almond butter

This first recipe makes about 2 lbs
Quick and Easy Fudge
2 cups (12 ounce package) of Hershey's, or German semi-sweet dark chocolate chips
1 1/4 cups (14 ounce can) sweetened condensed milk
1 cup chopped nuts (optional) (or, USE only a handful for taste)
1 teaspoon real vanilla extract
Combine choc. chips, sweetened condensed milk in microwave or saucepan. Warm over lowest possible heat, stirring until smooth. Remove from heat, then stir in nuts and vanilla. Spread evenly into foil-lined 8 to 9 inch square pan. Chill for 2 hours or until firm. Lift from pan and remove foil.
*Or; Line the pan with a handful of nuts, or lay them on top for presentational effect, especially if nuts are not desired. (They can easily pick them off if some friends don't care for them)
*If you use the microwave don't completely melt the choc chips. Take the fudge out of the oven and finish stirring the choc. chips until all are melted.
This is the easiest best tasting fudge ever...

My diabetic friendly fudge:
Chocolate Peanut Butter Cheese (protein) Fudge (No Cook Recipe) It has plenty of protein, more friendly diabetics candy, no corn syrups, proteins SLOWS blood sugar RELEASE.
Ingredients:
1/2 lb. Velveeta Cheese (or the other kind) (room temperature)
1/2 cup organic butter (room temperature or, margarine?)
1 cup organic peanut butter (creamy or crunchy)
1 tsp. vanilla, almond extract or mint i.e.
1 cup or hand full of nut meats
5 cups confectioner's sugar
*1/2 cup cocoa powder (is another option, only if you want to do the choc. version is desired)
*Cream the(room temperatures of;) cheese, butter, then add peanut butter and vanilla together. Mix well.
Add the sugar; cup at a time and taste the mixture to see if you would like it more sweet or less, just adjust the butter or peanut butter.
Beat in the nut meat (walnuts or pecans etc.,) in at last min.
* Get ready: 9 x 12 sq. pan _sprayed with non stick butter spray or lined with baking or wax paper
CHOCOLATE VERSION: Add in the cocoa powder if desired. This tastes great just as a peanut butter fudge and is much lighter.
Cheese slows down absorption's to sugars i.e.

The mixture may be very dry. Pat it firmly into pan and blot with paper towel on top to remove any excess oils and leave on over night then, refrigerate.
I've done a similar recipe in Jr. High Cafeteria while working there; and we used shredded American cheese then, just incorporate it thoroughly with the same ingredients; add room temperature butter.
Others methods use; blue cheese, cream cheese etc., Photo top peanut butter cheese fudge and bottom is the choc cheese fudge.

Truffles: After cooled, roll in same sized balls and melt choc. on low heat, wait one min. then roll in choc; place peanut butter fudge in the chocolate with a tooth pick and chill.
