December 30, 2005 Lost 110 pounds in 2005 I lost 150 lbs this last year. Now I would like to write down what I did to accomplish this. It’s very hard for a congestive heart failure, diabetic, asthmatic, arthritis to loose any weight. Not finished, I have a lot more weight to loose. I have a disability, bi polar with an effective disorder (brought about because of shell fish in meds and diet pills) and now off all medication for over 10 years. I did this very slowly and with the help of this new diet and herbs. I got on so many drugs because I qualified for Medicare and Medicaid with all this disabilities. With this you only can get drugs, no preventive medications that I had used before when I was more healthy. The drugs actually made everything worse and brought on more health problems. My weight went up using the bipolar drugs, diabetic and asthma (steroids) meds, cause more weight gain. I had no choice when I reached over 400 lbs. to get off the drugs or die. I was in so much pain that I had to go to a wheel chair. I decided to take things in my own hands when I figured out the doctors really could do nothing except drugging me and billing (milking) the government for my care.
So I decided to go back to what I knew Herbs and health foods. In the “60-‘70’s I had brought myself back to health of low-blood sugar and adrenal exhaustion. I educated myself with in health food area, even taking cooking classes from the Seventh Day Adventist. They had a health food store at this time were teaching very enlightened classes on the subject, especially on healthy recipes that was meatless and how to use other grains besides hard winter wheat. I also went to Dr. Smith (now deceased) who was their pastor and learned a lot from this very kind man.
Then I took lots of classes from local herbalist, Dr. David Christopher and La Dean Griffin who I attended 12 classes from her alone. I can’t tell you the library of books I began to read also. I took classes from Canada on horology in the ’70 too. I had a very bad marriage and all my children’s c-sections didn’t help my health. So I had to step back and arrange my life so the stress didn’t kill me off. It was either myself (or my ex a narcissist) so I got rid of him. (Mostly) I went back to school and got a BA with two minors and a semester in European Studies. (MA). But my health was going down hill because of the government’s insistence of treating me with only drugs for my health problems. My children all deserted my one by one. Dad had money and they didn’t like living poorly on the government. My bi polar was coming on at the stressfulness of raising 5 children by myself and with the stress of spending about 10 years in college. (I love school!) Learning. I did get a teaching certificate in the end.
1. I decided last year to do something about my health so I went back to eating whole complex (glycemic index) unadulterated, unpolluted, organic foods. More fruits and vegetables in my diet with 5-6 small meals a day.
2. Switch herbs slowing, in place of the drugs I was taking. Using my herbology knowledge and all it’s knowledge I had laid down because I couldn’t afford health foods and all required supplements needed.
3. I began using a journal of where I had been and where I was going. What didn’t turn out, but most of all recording what I knew. Sharing those changes on line.
4. Adding to what I knew to the latest research available and to my own library of knowledge verifying what I know is truth, rejecting all fads or popular beliefs. Next I will expound what I have done so far this year.

It has an accumulate effect with regarding health. I am a diabetic and do have problems with sweeteners, My mother, brother, 2 aunts and uncle are also diabetics so I am aware of the sugar problems and diabetics. I will not go into all the why's I got where I am in my thinking and experience to write what I do with the direction this will go. And it will surprise some of the "die- hards" out there. see: "Diabetes" This magazine has the March issue that's very informational on the different sugars. I do like everyone else keep up on the news concerning sugars. I don't get along with chemicals sugar substitutes, including Splenda so I'm not even going to give them space here. Chemicals just make the diabetic more sick in the long run and ruin kidney's functions. My brother before he died was heading to sue the diet pop companies. He died because he didn't have money enough for the kidney dialysis machine needed to filter his blood. He never could give up the diet pop. I chose to do most of this on honey. Because it the best natural predigested sugar on the market. The reader has to read the mild food diet to know where I am coming from. The body turns everything to glucose in order to utilize it in the body. Honey is natural glucose. It's better for the very sick because it doesn't take a lot for the body to break it down for use. That does not mean a diabetic can have a lot. See: The diabetic magazine below, they have in their magazine, a mean strawberry cheese cake using part honey. First of all, we need to cut down sucrose, sugars raw or white, corn syrups, etc., in all recipes. When I visited Europe I found their pies were not as sweet and the other deserts also but was very delicious. In America we over indulge in sweet deserts. Every meal, we think we have to have a desert. Why? It's a bad tradition that needs to be change. I was not raise in this tradition. My mother baked cookies once that I remember. I never had a birthday cake so I am not a fan of the over indulgent with the desert ideas of most American. White sugar is highly stimulating, full of chemicals, in order to bleached it white, and no food qualities to speak of. I use mostly, Stevia in most of my teas, it's slightly sedative as an herb. Fructose Derives from fruit, I prefer raw unbleached sugars from vegetable rather than fruit, that is if your going to occasionally use sugars. Honey doesn't seem to be that bad because of the way the body utilizes it in the end.
Fructose sugar is hard on arthritics and causes them lot more pain. It's so concentrated, over bleached with chemical. It throws the body into too fast elimination RE: (fruit speeds up the process of elimination, so eat it with grains or vegetables.) for the body to assimilate it properly. It's really in an unnatural state. It robs the body of minerals necessary for health. What's a shame it's in so many drinks, like pop, Yes, even in health food stores and their healthy drinks. Now you know, stay away from this product in any form. Stay away from this sugar if you have pain.
Black strap molasses is rich in iron and good in bread making. Down the chain of sugars are the white bleached (with chemicals) are sugars. And, corn syrups which is found to increase appetites.
Cough Medicine (& for anemia)
1 cup molasses
4 T. butter
1/2 t. ginger root (fresh)
Boil 30 minutes on a low heat, cover for 5 minutes, add lemons. Very optional: Store in brown bottles. You can add a cinnamon stick, or cloves to kill germs. To add more iron add a small fresh bruised Yellow or Burdock root. This will aid the liver and add more iron. Good in cases of leukemia Caution: You can read anything in diabetic magazine's about which are not good for you. Note, science have not cured diabetes's. Magazine's are looking for a story and a "cure all" too.

Then you have the unrefined cane sugar, that doesn't bleach it's product all available at a good health food store.
Maple Sugar, Xylitol (this is a diabetic sugar because it doesn't cause a rapid release of glucose and has dental benefit's. A Sugar alcohols derivative and supports healthy bones, so it claims. And last for now anyway, Rapadura a whole cane sugar. All are better than white and sugar substitutes. Still cut way back on all sweeteners. Fructooligosaccharides FOS, is said to prevent germs and parasites from attacking you digestive tract...says Japanese Researchers. .Let's continue with the Properties of Honey + Honey for burns, it cools, removes pain aids for fast healing without scarring, good for bed wetter (a teaspoon before bed, aids water retention. A spoonful in hot milk aids sleep. An excellent healer, can cover wounds with honey and a bandage. Nasal congestion-place a spoonful of honey in a basin of hot water and inhale fumes after covering you head with a towel over the sink. Very effective. Dissolve a spoonful of honey in warm water, or put in your water jug and keep fridge for fatigue. With honey being glucose it is quickly absorbed by the digestive system. Use before competing in your competitions.
For Allergies; 2 tsp. honey
2 tsp. cider vinegar in 3/4 cup water.
Take before going to bed.
Facial Deep Cleanser, mix honey with oatmeal 50/50 till thick and use as a face pack. Leave on half an hour then wash off. Great as a deep cleanser for acne etc. Remember skin is an absorbing organ. Good for poor digestion, especially in using honey in herbal formulas will aid digestion. Is reputed to be wonderful for the joints. Mix honey with equal quantity of olive oil and cover head with a warm towel for half an hour then shampoo. A hair conditioner which feed the hair and scalp will look and feel better. For stress, honey water will stabilize by clamming highs and raises the lows. 25% honey to water.
Anemia, enriches the blood by raising corpuscle content. The darker the honey the more rich in minerals. So is molasses rich in iron. Food Preservative, replacing sugar for honey will stay fresher longer due to its natural antibiotics. (reduce liquids by approx. 1/5 to allow for moisture in honey) Great with whole wheat because whole wheat in recipe needs more liquid. Heart patients are well advised to replace white sugar (sucrose) with honey or any persons with chronic disease because of the glucose change over to the body. Utilizes readily and easily giving a rest to any conversion process on weak bodies.
Hay fever, chewing the tops of comb honey stimulates the immune system due to the minute amounts of pollen. In season chew for 20 minutes 1 teaspoon of bee capping top five to six time a day. Highly effective and useful for asthma suffers. English researchers has shown a teaspoon of honey per day aids calcium utilization's and thus prevents osteoporosis. Aids in a Long Life, users are known world wide to be the most long-lived people. Beekeepers suffer less from cancers and arthritis than any other occupational group. Use a spoon of honey in half a glass of warm water. At start of a migraine attack, repeat in 20 minutes if necessary. (if stress related)
Conjunctivitis, pink eye -- honey or Orsa clay (or white refined clay) is good too for any eye problem. A natural antibiotic is Propolis. Bee's gather it and spear it on the walls of their hives. It protects them from bacteria, viruses, and fungi the unfriendly microbes.
Recipe for Cough syrup
6 oz. honey 2 oz. glycerin (if no glycerin use Brag's apple cider vinegar)
2 lemons juiced Mix well - bottle in dark bottles bought at health food store or corked dark bottles (after drinking the root beer) (Just a cup of water, lemons and honey will do in most cases of light flue, especially for comfort and cutting up mucus.)
*Used as required. And I've also used this recipe with chopped garlic or onion for natural sulfur. (antibiotic) Macerate for 3 days and strain then strain again though paper towels. Add the honey after this process. Added 3 droppers full of tincture of Lobelia at the end or chopped strained ginger root. It's strain with the garlic. (the catalyst) To rid the flavor of Garlic flavor use Cinnamon oil put out for flavoring candy suckers, or go to the health food stores. It does so much for this recipe. It is very strong! If I have a cinnamon stick I stick one in the dark bottle that I store this "cure all" in. It helps in the preservation of the tincture and kill any germ that might set in. Honey is great in herbal formulas.
However cut back on all sources of sugars. Less sugar, "sparingly," in desserts recipes for better health.
*Other sugars: Evaporated Cane Juice, Fruit Juices, Rice Syrup, Licorice Root, Refine Sugar, Vegetable Glycerin, Agave Nectar (fructose), Maple Syrup or Barley Malt are some other forms of sugar. Note they are not glucose sugar which has to be changed by hormones to be utilized easily in the body. (Takes health and energy to change these sugars over to glucose). Watch labels closely these days they are very tricky and deceiving.

I'm giving you a variety here. What do you have available near you in your part of the country, in your garden, health food store etc. Check out other ideas on the Internet too. Educate yourselves, get 2-3 herbal dictionaries i.e. Canada has lots school teaching herbal courses, why not? The alternative is letting others beguile you at your expense.

Christopher's "School of Natural Healing" Lots of formulas from Provo Utah Listed here are some other good herbs to use for bladder infections: Goldenseal root. note: (If bleeding) *goldenseal interferes with other drugs and may taking some of them out of the system but in small amounts. Gravel Root, Meadow root and especially a lot of Marshmallow root. Ma Hang on with this herb till the duration of the infection is gone. Always have this herb and Lobelia on hand. This goes wild and abundantly. (a weed) Have someone show you where it is about in your area, bruise the root and make a concoction out of it and drink. I add it to my garlic formula, which turns out nice for a bladder infection too.
Uva Ursa, add Ginseng root, j\Juniper berries (ginger or Lobelia for a "carrier" (explained in my other blog page) Use distilled water to drink. A bladder infection will turn into a yeast infection or may be a yeast infection. Check with your doctor. If your a diabetic, "Novolin" insulin is notorious for bladder and yeast infection. The extender in the Novolin is "Yeast". If it keeps happening change to another insulin. You can use Humalog, it's extender is "e coli" which may make some itch, and muscles sore. (It's the germ warfare mantality, use poisons to carry chemical medications. If you arthritic avoid, it makes the condition worse. And from there is LANTUS, man's home made brew of chemicals. Bearberry is an excellent herb for urinary track infections also. #2 Take a bag of fresh or frozen cranberries and boil them in small amount of water at the end while hot add marshmallow root. Cool and drink. Don't add sugar.

I use Omega 3's for my bi polar with much success. It's also excellent in weight problem and using with the elderly who need more of the omega's. Omega 3's are found in all seeds, nuts, organic raw oils and in fish. (DHA, EPA and ALA) Low fat diets did much harm to dieters and the studies show to their children (and fetus) were effected. Yet, some continue with this awful ignorant practice. We need more good fats! It effected bi-polar and all mental disease especially. Also the Zone diet has brought this to my attention. One of the many diets I've tried. Without good fat I was more fuzzy or foggy after eating as mentioned in the book. Add the nuts and and good omega fats and this condition disappeared. (However, there's too much meat on the Zone Diet) Meat or high protein stops a process of elimination or in other words "the disease". (or getting rid of toxic waste as you are trying to build the body)(See Fasting, Semi Fasting and Mild food diet for further information on this subject in this blog) Use a variety of omegas (raw organically grown, unrefined oils), not all contain DHA i.e. Fish oil has been a good source but now is questionable because of the contaminants of heavy metals (PCB's) especially in the US and Europe. A better source is from the Northern Hemisphere, between New Zealand and the Antarctica. Make sure any consumption of any fish oil is "molecularly distilled" or fresh. (Eat only smaller fish) Note that even local grown fresh fish contain pesticides, antibotics in their feed and some are genically modified (GM)) to be bigger. Some are sick indeed and have parasites. (Chili and US waters are the ones I know about) Now to make them look wild they add coloring which make them unfit to eat. Pay a little more for health sake. Health is more inportant than money and harder to achieved and maintain. Vegetarian diets with the enzymes needed for conversions processing of the omega found in fish and seed oils. Fish oils may not pass through the cell membrane's because of the triglycerides. I use Omega 3's for my bi polar, a great brain healer, and weight with much success (110 lbs loss.) Flaxseed oil every meal. It also helps my cholesterol keeping it down to 111, so far. Yes, you need to add the BEST oils. I also use Safflower Herb (Safron's herb is too expensive) and Safflower oil for losing weight also (takes care of uric acids). Only after a long laps without the drugs can you take these herbs.(In other word you can't take some herbs the same time as you do drugs. Also read all directions on all packages especially with histamines and warnings of MAO inhibitors. I had a bad reaction to Benadryl. I even called the company because of the horrible set back I had. It seem like it took all my medications out of my system. No medication worked on me for the six months of hell I went through. I started it because I was having a reaction to shell fish and poisen control told me to take it. All my episodes have been brought on by medications and allergic reactions, so pay attention and watch for signs trigger yours. Over the counter drugs have brought on my bouts of problems for as long as six months putting me into the hospital. Oh, Doctors don't seem to be aware of what triggers problems??? After all they talk down to you, "your just crazy". We seem to be the ones who by trial and error are training them. Doctors do not know about the medications they administer. If you've been there you know this for sure. When you go so high going into voices you will learn the hard way how much Doctors really know and that they can't control them. You will find out that drugs just don't work. I think what's sad is many of us are very intelligent, but the doctors and health proffesional do not listen to anythng you have to say. They will even use your condition against you. You can lick bi polar if you do not have lesion in the brain area. Even these folks can improve their conditions by diet. (Read Bernard Jensen's book "Iridology Simplified" a great nutritionist. I only trust his methods by the way. 760-291-1255 lots of counterfeits and paranoias have move into the health food business. "Know the Cause" Why don't the drugs work? They don't get rid of the parasites involved which is in the brain area of the body. And too, the inherant leason and parasties are causing the problems within this area. Doctors and researchers don't know the difference between the two causes nor what to do if they see check out lesions sometimes called crypts in iridology. If drug companies or doctors could cure you did do you know you'r break the pharmacical companies and stock will go down! I believe like Kevin Trudeau, they don't want to cure anyone.
Try Dulflican (a drug that taken too much can harm the liver) or other parasital herbs like Olive Leaf Extract along with Apple Cider Vinegar. (Then Change the anti-fungi herbs every three months or so) If you've been watching the eye at 12:00 you should see a change in that time. The lines will widen,lightens and then disappears and you bouts diminish too.If I haven't lost you, try Licorice Root for any adrenal stress. Licorice root can be sub for sugar and it helps gently with the liver and helps remove stress. It isn't till you go off this herb that you'll miss it.
Also Milk Thistle is a good liver herb. The liver needs to be clean here along with the parasites. Then get a colon cleanser to get the parasites out of the bowel. Take your B Complex's. They help keep you calm also. I swear by Lobelia tinture (It removes poisons from the body that are buiding up.) Start with the dosage on the bottle and increase till your calm but not puking. This is a "General" herb with intelligence. It is designed to communicate to any other herb what to do and where to go. It will go to the weakest part of the system having problems, but may not reconize your drug of choice if it's not helpful to the body and think it is a poison and neuter it. If your taking street drugs your compounding your problem. No one can help one that crazy enough to be so stupid. Enjoy your short life. Wickedness never will and has been "happiness". Treat yourself well, expect the best and buy the best foods. Complex Carbs, lots of organic fruits and vegetables. The best nutrition but no meats, vegetarianism is best or at least cut down to one meat a day till you can go further with this concept. This will slowly clean up your body letting the parasite out faster. Check "the mild food diet" in this blog or if you up to it "the semi fast diet" at least once week. You must eat very nutritious foods the rest of your life. Depression: Low feeling sucicidal, don't want to exist? Try a rich cup of organic coffee. (not if your on a high), but again you wouldn't be feeling low. But for some can cause mania if not in the right dosage. Use only if very low never when normal or in a mania state. Watch out if you have high blood pressure too. Coffee will make it worse. Our lows are worse than others that are normal so the same cup of coffee with react differently on each bi polar (NEVER ON A HIGH). Use even at night because we are so low in the first place. (1/4 cup?) Use it for medication only because your body will get use to it and when you need it's effects the action of the coffee will take more and more. No don't just take caffine, you need the whole seed or bean. Extracts from of the herbs makes them drugs. Freeze in ice cube trays or keep some in a container in the fridge and dose it out. You cannot do this if you are still on your medications. You have to be weaned off first. For a while getting off is awful because of the residue of drugs that will be eliminating from your liver and system. It will cause personality changes.Remember the drugs have bunted you emotions, now your free and will be angry, and you may speak up more i.e. Don't worry you'll get more control with the herbs (which now you can have) and follow the new diet.(if you can't do it, don't follow any of this. This is not for you!) You'll need coffee less and less as you get well. Then slowly change to a lower dosage of you meds till you graduate off them entirely. I've been of all medications for mental, including depression and sleep problems for over a year, the transtion was hard because I had no help and didn't know what to expect. I hope I have helped someone. My personality is smoothing out too.
Doctors with their drugs cannot heal or close this lesion in the brain, but mild food diet and herbs can close them from my experence. Good nutrition could make this person have much better life than just drugs, but in cases like this not all can be saved (just made better). Most will not or can not follow any diet and some of the eyes are much worse and so are their conditions mentally and health. I loved planting tomatoes every year and had enough to last me for years with an acre of land and about 1/3 of it in garden. Then I discovered using tomatoes recipes in a way that it was ready to use, before it was fashionable. It wasn’t that difficult. I just did small batches each week. It was so much better than to just cold packing plain tomatoes, which no one ate and my storage got larger. I need the jar to redo a fresh supply but no one really seemed to use just a jar of tomatoes. These are the recipes using my tomatoes that got used and my family loved. For the gardener’s, I’ll pass on these recipes. Please feel free to add another herb or take out.
Pizza Sauce
3 quarts of puree tomatoes
Honey or sugar to taste (optional)
1/3-cup olive oil
4-5 cloves of garlic
Fresh chopped basil (by site) (parsley)
1 Tbs. Italian Seasoning (optional)
Salt and pepper
Mix: Oregano, Cumin, sweet Basil etc. or just use 1 Tbs. Italian Seasoning.
I just used the Italian Seasoning and Basil it’s simple and easy.
You can cook them down more with one jar at a time later. I had to work fast with all the tomatoes coming in all at once.
Process as you would tomatoes. (I cold-pack them. This process works out fine unless you add too much vegetable i.e.)

Salsa
Moderately hot
Place 14 quarts of peeled and chopped red tomatoes in 12-quart pot. Add in 13 garlic’s to the pot. Add the next 5 ingredients through meat grinder, (course), food chopper etc., (don’t over chop it)
6 large onions
13 green peppers
7 green jalapenos (or another pepper you prefer)
4 yellow jalapenos
2 (7 oz.) cans of diced Ortega green chilies
Add:
3 tsp. Oregano, (parsley?)
1 Tbs. Cumin
14 tsp. sugar or 7 tsp. honey
5 T. salt
1 T. pepper
2 T. seasoned salt (or)
8 T. olive oil
9 T. vinegar
*Fruit to sweeten instead of sugar.
Boil 3-6 hours. Put into clean jars and seal. Process for 10 minutes. Makes 21 pints.

The next one was my children’s favorite. When they got home from school they wanted spaghetti-O soup. That’s what they name it. I never had any left-overs for the next year and did more ever year.
Spaghetti- Or Spaghetti O’ Soup
10 quarts tomatoes
1 cup chopped celery or celery seeds
3 chopped onions
4 chopped green peppers
4 Tbs. salts
3 bay leaves (optional)
8 Tbs. sugar or 4 tbs. honey
1 tsp. pepper
Herb of choice out of garden is nice for a rich flavor.
While cool mix with 14 Tbs. flour or/and 4 Tbs. cornstarch
Last minute add some butter to taste (I added quit a bit) and lastly, before processing add round small macaroni’s (must process immediately) (A B C’s macaroni’s will work)
Cook 20-30 minutes
Process 15 minutes
This was so well like that the children went to the panty after school and heated it up the ready to eat recipe. None was left for the winter.
These are more method recipes, spice them to suit yourself and your family likes. In a hurry keep Italian Seasoning on hand and sub. in recipes.

Tomato Relish
Chop all finely and put into a large kettle:
30 Tomatoes
12 apples
10 onions
6 green chilies
Add: 2 Tb. salt, 1 tsp. pepper, 1 pt. red vinegar and ½ - 1 cups sugar. Depends on the tartness of apples. Cook 30 minutes or more until thickness you prefer. Spoon into bottles and seal. This is great on Pinto Beans.
Method: Variations can be done...
Spaghetti Sauce
1-peck tomatoes (8 qts. or ½ bushel)
4-8 Tbs. Honey
4 Tb. Salt (to your taste)
4-6 large onions
4 Tb. garlic powder or fresh cloves
4 Tbs. oregano
4 large bell peppers, chopped
4 Tb. Italian Seasoning or more
½ tsp. pepper (optional)
1 Tbs. cumin (use less if object able)
Add in your favorites herbs from the garden and take them out after you’ve gotten the flavors out of them like parsley etc.
I like the processing the peppers under the broiler on both sides, then sack in plastic sack and peeled. The results are tastier. But this is optional and if you have the time.
Boil down to consistency desired. Process 15 minutes. To thicken more add cornstarch with a little cool water, your meat, cheese, etc when ready to serve.
Simple Basic Salsa
15 or so jalapeno peppers, chopped
3 medium onion, chopped
18 large ripe chopped tomatoes
1-cup vinegar
3 tsp. salt
Mix in large pan and cook over low heat to desired consistency 2-3 hour. Don’t scorch. Process in water bath for 15 minutes in pint jars. Makes 5-6 pints.

VEGGIE CASSEROLE

Vegetarian Veggie Casserole
This is a vegetarian vegetable casserole dish recipe (Being single I've learned techniques to this original recipe I had used for six people, but it's basically the same.) You can go wild on a veg. recipe like this. I freeze some of this recipe in sandwich bags 1 cup at a time to eat it when ever I need a good snack.
Eat more veggies will not make you gain weight and this is a sample of how to achieve it. It has lots of fiber so eat all you want if you add mostly
vegetables with grains to compliment them. Here's a recipe that shows how to do
it.
Some times I add even more fresh milder tasting veggies. This is one of my economical basic recipes utilizing any left over vegetables that I've saved in the freezers from meals. I love the combinations of their tastes with breads. This use to be fashionable in the '50 when not so much pastas were used. No meats here but I do use vegetable or chicken broths when ever possible, or what have it on hand. If you make a mistake add more stuffing or more veggies. If you are a cheese condo sir shred up a little almond cheese, or veggie sausage (Morning Star), sour cream i.e. on top for company dinner
VEGETARIAN VEGETABLE CASSEROLE.
*½ box of chicken flavor or etc. stuffing mix (or, make your own from w/w with 1/2
white bread then add in poultry seasoning (1 To 2 tsp) with celery seed or parsley herb to taste.
*about 1 cup Cream of celery or mushroom soup for the liquid needed or just add broth or ½ cup of each.
*Mixed with vegetables (eye ball it to your tastes) I use more than I did in the beginning so keep experimenting on your needs.
*Fresh vegetables such as squash (a small slice zuke, or yellow) Don't over cook
any of the vegetables.
*1 cup chopped celery (about) this adds in natural salt in vegetarian recipes)
*½ cup chopped onion
*2-3 tbs olive oil (NO SALT needed, pepper to taste)
an egg is optional (or even a boiled egg if you think you need more protein...you don't ...
Mixing all the dry ingredients, vegetables then enough of all rest of the liquids together as not to be too soggy just wet, into the casserole dish. At this point is where I remove ½ and freeze some to bake later. A cup in each sandwich baggie. I like this recipe so well and is basic to vegetarians.
Make a mushroom gravy with a can of mushroom soup on top.

WON TON SOUP

A long time ago, I got this recipe from weight watchers its slimming and has a very nice. My kids loved it. Don't over cook the won tons. I've done it several times as they will fall apart. The wrapper will give you direction on how to wrap and seal them with water. There's several ways to do so. Also check on google's "images" then, type in "won ton soup." They're pictures and many other soup recipes. I'm satisfied with this one. You could make this vegetarian if you used meat substitutes found in grocery's or use tofu. Make the soup up and freeze, and the frozen chopped spinach, then later add the fresh won ton chicken or pork later.
1 Package of Won Tons (20) 3x3 inch squares (read directions)
2 ounces of cooked ground pork or, (ground chicken add sausage seasoning)
1/4 cup chopped scallions (green onions)
2 teaspoons teriyaki sauce or soy if you don't have it.
1/2 teaspoon corn starch to thicken the broth (mix with the water first)
1/4 teaspoon ground fresh ginger
Chop all small enough to go into the won ton wrapper's easily. Save scallions and/or mushrooms for the broth.

Soup
2 1/4 quart water (divide)
3 packets of instant chicken broth and seasoning mix, Or, organic chicken broth, or ("Better Than Bouillon" brand of turkey base follow direction on jar. Expensive, but goes a long ways and is more natural than the instant chicken broth, an excellent stock.)
1 cup shredded spinach
1/4 cup thinly sliced mushrooms (or, another veg. such as celery which always is a natural salt, i.e.)
Make the broth up with half the water then add the other half of the boiling water with chopped spinach, mushrooms to the water. Add the stuffed won tons last min or two and serve immediately.

Mayo Dark Chocolate Cake

Chocolate cake from a mix maybe easy but read the label and count the preservatives with bad forms of sugar. This cake actually is very moist and taste better the next day. During WWII their was a shortage of eggs, this cake derived from the problem. Takes about 30 minutes. Semi homemade just substitute the oil for mayo in a boxed cake in emergency's.
CHOCOLATE CAKE
Sift these three ingredients together;
2 cup sifted flour (cake flour) I have made this with WW but can't remember how much.
1 ¼ sugar (about, taste your batter)
3 heaping Tablespoons no sugar dark choc. baking Coco powder_Dark Hershey's if in your area.
Set aside
Next beat together;
1 ¼ cups of warm water
2 teaspoons baking soda
1 teaspoon vanilla
1 cup light mayo
Bake at 375 for 30-5 minutes
36 cupcakes
After it completely cools, used light no fat cool whip and half light canned frosting, mix them together or a 7 min. frosting, cream cheese, etc. (top with pecans or cherry)

Here's another Mayonnaise Cake from a magazine collected in the 70's
3 cups flour
1 1/2 cups sugar
1/3 cup cocoa
2 1/4 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 cups mayonnaise
1 1/2 cups water
1 1/2 teaspoons vanilla
Grease 2- 9 x 1 1/2 inch,) layer pans; line bottoms with waxed paper. Sift together dry ingredients into large bowl. Stir in Mayo. Gradually stir in water and vanilla until smooth and blended. Pour into prepared pans. Bake in 350 moderate oven about 30 minutes, or till it springs back in the center when touched. Cool and remove from pans. Makes two layers.
Angel Mallow Frosting
1/2 cup sugar, 2 egg whites, 2 tbs. water, 1 - 7 oz. tsp. vanilla
Combine sugar, egg whites and water in double boiler; beat with electric or rotary beater over boiling water until soft peaks forms. Add marshmallow cream; continue beating until stiff and peaks form. Remove from heat; beat in vanilla. Tint frosting with food color if desired. (Seven minute frosting is a good frosting on this cake too.)

GREEN TOMATO MINCEMEAT

Green Tomato Mincemeat (Vegetarian Mincemeat) Do you have lots of green tomatos in your garden? This doesn't taste anything like green tomatoes that takes on the herbs and fruit taste of a light mincement.
This makes your kitchen smell heavenly. In addition, it is the lightest best mincemeat you have ever tasted. I got the recipe because I grew my own tomatoes and had many green tomatoes left over. I've worked in a deli next to the butcher, believe me you don't want to eat soot (fat) they put in commercial mincemeat's. This does taste like mincemeat but lighter. The spices are good for you and cloves, cinnamon, nutmeg, and vinegar will kill parasites in the most natural way!
You have natural fiber and properties that bring your body Ph balance normal. (Ginger, fruit peels)
Once you make it up it last me for about five years. I canned mine in quart jars. Your friends love this as a gift, because you cannot buy it and expensive to make. I love mincemeat but none is better than this.
6 lbs. or 24 small green tomatoes.
10-12 tart apples
1 lb. seedless raisins
4 cup or less (taste) brown sugar (no corn syrup here!)
1/2 cup of vinegar
1-teaspoon salt
2-teaspoon cinnamon
1-teaspoon nutmeg
1-teaspoon cloves
1/2 teaspoon ginger
One orange
One lemon
Core tomatoes and apples (do not peel)
(Put through coarse blade of food chopper.
Combine raisins, sugar and spices with vinegar in a large open kettle and then add apples and raisins.
Cook over low heat about 2 hours stirring constantly (This will scorch on bottom and a lot of money and time down the drain.) Stay in the kitchen.
Quarter the lemon and orange (leaving peel on; remove seeds, run through a fine blade of food chopper.
Add to mincemeat and stir well.
To freeze, cool down and pack in pint containers.
To can fill pint jars to within 1/2" of the top and process 30 minutes in boiling water bath.
This recipe makes 10 pints, and one-pint makes up a pie.

FRIED APPLES, (CLOVE CREAM)

Fried Apples (2 cups)
1 medium onion (sauteed until translucent)
3 apples (sauteed 15 minutes)
2 tbl butter
1 tbs sugar
1 tbs thyme leaves or,
1 tsp. salt pepper to taste
Clove Cream
1 cup heavy cream (whipping)
2 tbs sugar
¼ tsp. Ground cloves
Serve over apples or pumpkin, or sweet potato pie i.e.
*Other options: Use one teaspoon cinnamon,1/4 teaspoon allspice to ½ teaspoon) if you can't handle the cloves. I have the original apple spices which I use at times for variation here in this blog. They stopped making the all-n -one apple pie spices, but before it stopped I had copied the formulation from their can. Top with only veggie cool whip, or real whipped real cream or etc. Site Meter

SALAD MACARONI

Macaroni Spring Salad
This particular recipe is simple of a good basic light vegetarian macaroni salad. Make substitutions if you don’t like a certain herb, or vegetable for one you prefer. This is my favorite so I really don’t vary much from it.
And it's my daughters favorite If you can tolerate tuna use the Spam tofu recipe* (see page), meat or eggs could be added other than suggested. All the ingredients are measured to “about...”
I don’t really measure mostly as an artist it mostly by sight. I’ve found complex foods with more grams of fiber slow down digestion and works better for diabetics. The blood sugar doesn’t peak so fast and you’re not hungry for longer period of time. Choose "salad" macaroni that shows more fiber than other brands and you’ll be healthier using this recipe. We make this when the garden starts coming in and/the parsley is here in the spring.
4 cups cooked salad macaroni (small size) (cool down before adding
dressing)
Sea salt the boiling water macaroni is cook in. (about 1 tsp.)
Use # 1 Amber Durum Wheat, ¼ cup = 2 grams of fiber. Drain well, set in
colander to cool and set aside.

Dressing: Set aside and mix
¾ cups organic mayo*
1 tbs. Dijon mustard
1 small fresh squeezed lemon juice
Mix well keep it cooled and add in the following;

¾ cup green onions chopped small (or ½)
¼ cup fresh chopped parsley or equivalent of another fresh herb
½ can of black sliced chopped olives (this adds salt to recipe)
¾ cup or less of celery, chopped very small
Combine the dressing with the above ingredients afterwards macerate the macaroni salad at least 3-4 hours in refrigerator. (Keep dicing of the
vegetables as small as the salad macaroni’s.)
Topping:
3 boil egg (optional)
Boil egg 5 minutes, turn off burner, and don’t peek underneath the lid until cooled. This makes a perfect egg. Split one egg in 1/4th to top the salad and cut the other two eggs chop the size of the macaroni. Don’t put anything "hot" into a macaroni salad. ½ or so seeded diced fresh tomato (optional)
Make a lettuce bed of salad greens (washed and dried) Elvis was the connoisseur of Macaroni Salad so Enjoy.
*Very Optional: Diced and cube the organic Tofu Spam, or meat when used as a variation as a topping. Don’t make this light fresh tasting recipe too heavy, so careful here. Use the recipe on my other pages for the tofu nuggets.
This is a good fresh “seasonal garden” recipe. Or, you can make it more quickly if you use:
*Italian dressing can be sub for the mayo
* Some dill or Sweet pickle relish can be added, or dice 4 small dill pickles.

RICE AND LENTIL SALAD

Lentil and Rice Salad (Loaded with fiber) This will last for days and it's good too.
This has lots of delicious flavors and in 1/4 cup has 15 grams of fiber for the day, and 13 grams of vegetable protein just in the lentils. This recipe is more a method and varies depending on the fresh vegetables available. Other vegetable can be added just experiment with them. If you add tomatoes, squeeze the seed and center out of them and dice them first. (Just use this as a guide or method if you have access to other vegetables.)
1 1/14 cups dried green lentils or Western Family’s has a good product
2 ½ cups chicken broth plus 2 cups or, (follow liquid suggestions on dry beans - rice for the exact amounts)
1-cup rice (long grain)
1 tbls of olive oil
1 boil diced carrot or/and 3 stalks of celery (veg) or ¼ cup diced sweet red pepper etc.,
1 small red onion (finely chopped)
2 cloves of minced garlic (optional)
1 small can of sliced olives
½ cup fresh chopped parsley
2 tsp lemon
Salt and freshly ground black pepper
Follow the directions on the package of lentils for “salad” (boil 10-15 minutes.) After cooking cool, rinse, and drain. Do not over cook lentils for salads.
You do the rice in the same way with or without chicken broth and a bit of salt added. Cool down then add to the beans. Eye ball the two with the right amount of rice for your tastes.
Chop your desired vegetable desired adding together and tossing all the ingredients in a large bowl then top with the oil and lemon. Add your favorite dressing such as olive oil, Italian, mayo i.e. Cover and refrigerate over night blending the flavors into the lentils and rice.
This is one I make up all the time and is my favorite. You don’t have to use chicken or other broths, water works. This has plenty of flavors without adding any broths at all.

QUICK SEMI-HOMEMADE STEW

Quick Stew (Semi-homemade)
1 Can Dinty Moore stew (15 ounces) (It has no preservatives)
1 potato
¼ to ½ cup more chopped vegetables such as; (peas, carrots, celery or left over veggies_frozen or fresh.
½ cup chopped onion.
Dice potatoes in small stew size and boil.
Add in you veggies
I keep chopped frozen onion in a freezer bag in the freezer ready to go for such a quick meal. Add in a handful.
*This is a method recipe and how much, it depends on the size of the Hormel's Dinty Moore stew. Do the larger sizes for the size of your family. (3 sizes) This is for the smaller can add more potatoes or veg. for the larger sizes.
This is stew is a better flavored product. Mom used another brand but I can't remember which one she used. As you know some of the stews and soups don't have enough in them or flavor. Find a good brand in your area. A good brand will be more costly.
(It has 10 g protein, 200 calories, the fiber is more depending on the added vegetables.

YELLOW SPLIT PEA, PATOTO SOUP

Yellow split pea and potato soup
1 tbs hot chili oil or vegetable oil
1 large red bell peppers, chipped about 1 ½ cups
1 large chopped onion (1 cup)
1 large diced carrot (1 cup)
1 teaspoon finely chopped ginger root
2 gloves finely chopped garlic
1-2 red jalapeno chilies, seeded and chopped
1 ¼ cups dried sorted and rinsed yellow split peas
2 cups broth
1 tbls curry powder
½ tsp salt
2 one inch cube medium potatoes
1 can (14 oz.) unsweetened coconut milk

(top with this Cilantro Sauce)
1/3 cup yogurt
2 tbs fresh chopped cilantro
¼ teaspoons grated lime peel (zest)

Heat oil in 3 qt. Saucepan over medium high heat. Cook bell pepper, onion, carrot, ginger root, garlic and chilies in oil, stirring occasionally, until onion is tender.
Stir in remaining ingredients. Heat to boiling and reduce heat. Cover and simmer 5-35 minutes until peas and potatoes are tender.
6 servings
Fiber 6 grams :(one serving)
protein 15 grams
380 calories
Whenever I use curry I like the cream sauce made with coconut milk. No need of more protein. You can leave out some of the optional items, such as the chilies, or use chicken or veg. broth.

RE FRIED BEAN BURGERS

RE FRIED BEAN BURGERS
(We all need to eat legumes at least once a week, and pass on the habit and tastes to our children.)
1 1 can (16 oz.) vegetarian refried beans
1 can (4 oz.) chopped green chilies, drained
1 egg, slightly beaten
½ cup dried bread crumbs
1 small chopped onion (¼ cup)
¼ cup shredded cheddar cheese (1 oz.)
½ teaspoon salt
2 tablespoons vegetable oil
Prepare Guacamole. Mix beans, chilies, egg, bread crumbs, onion, cheese and salt.
Heat oil in cast iron skillet over medium heat.
Drop bean mixture by 4 spoonfuls patties, each 1 inch thick. Cook about 5 minutes on each side or until hot and brown before turning over.
Top with Guacamole. 4 burgers
Guacamole
1 sm. Ripe mashed avocado
1 seeded and finely chopped medium tomato (¾ cup)
1 crushed clove garlic
2 Tbs finely chopped onion
1 tbs finely chopped cilantro (optional)
1 tbs lemon juice
¼ tsp salt
4 drops red pepper sauce
Mix all ingredients. Cover and refrigerate 1 hour to blend flavors.
9 grams of fiber, 13 grams of protein
This recipe is more cost effective than Morning Stars Black Bean Burgers and better.

VEGETABLE STOCK (SEMI FASTS)

VEGETABLE BROTH: For so many recipes and better than the store bought stocks. I use this when their is flue (colds) in the house. (Natural Sulfur kill viruses)
2 Medium leeks
4 Onions
3 Celery stocks
1 Small bunch parsley
1 Tablespoons olive oil
2 Teaspoons large-leaf marjoram
1/2 Teaspoon dried thyme
3 Bay leaves or 1/2 California bay leaf)
1. Chop the leeks in half, length wise, wash and trim well to remove any interior dirt; use white and light green parts only and chop. Add in onions, carrots, celery and parsley.
@. heat the olive oil in large pot and add in the vegetables. Stir and brown. Add 1 1/2 gallons of cold water. Add the marjoram, thy and bay leaves.
3. Bring to a boil, reduce heat, simmer, partly covered for 1 hour.
4. Strain stock through cheese cloth or lined strainer i.e. and cool and chill or freeze from here.

PATATO DUMPLINGS

POTATO DUMPLINGS
(Comfort food and is a substitute for pastas, rice and grains. You can use creamed vegetable broths thick ed with milk and flour (rue) then add in the dumplings or in stews etc.) Use organic is best when ever possible.
3 large potatoes
1-2 cups unbleached flour
salt to taste
dash of pepper or paprika
dash grated nutmeg
2 tbs chopped fresh parsley

1. Peel potatoes, cut in quarters, cover with cold water , bring to a boil, reduce heat, cover and cook until tender. Drain and mash.
2. To make dumplings, for each cup of mashed potato put 1 cup minus 2 tablespoons flour in a bowl and mix with salt to taste, dashes of paprika and nutmeg, and chopped parsley.
3. Add the warm potatoes and knead on a floured surface just until dough is well mixed and not sticky. Let rest for 14 minutes.
4. Roll chunks of dough on floured board in logs about 1 inch thick. Cut into diagonal slices about ¾ inch thick.
5. Bring a large pot of water to boil, and then add the dumplings. After they rise to the surface, adjust heat and simmer for 20 minutes uncovered.
Drain well and cover with your favorite pasta sauce.
