Refrigerator Oatmeal Cookies
These are great to have stored (on hand) when grand children come around. Just slice off and bake as many as you would like then bake. Do size and cut out the same size so they will bake and brown the same. I've also slice them uncooked and froze each cookie for after school snack or breakfast. I hated to have too many cookies for the children to eat at one time, portion them out a dozen at a time depending on how many children. This make about 5 doz. depending on your measuring scoop. (1/8'' ice cream scoops are great, and you can sometimes pick them up at the thrift stores.
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 well beaten eggs
1 tsp vanilla
1 tsp soda
1 tsp salt
1 ½ cups flour (or part or 1 cup oat flour will make them tastier.)
3 cup quick cooking oats
optional is ½ cup chopped walnuts
Cream shortening and sugar; add eggs vanilla; beat well
Add dry ingredients; add in oatmeal and nuts; mix well
Shape in rolls, wrap in waxed paper, chill thoroughly overnight.
Slice ¼ inch thick and bake at 350 for 10-12 minutes on a good cookie sheet.
