CORN BREAD DUMPLINGS
(Do a semi home made style and start with any good canned Chile or use the chili bean recipe in this blog.)
Ingredients;
1 16 ounce chunky fresh salsa
(or, use 15 ounce cannellini etc. beans rinsed and drained
1 tsp chili powder or some fresh peppers like Chipotle peppers if your salsa doesn't have any green in it.
2/3 cup water

1 8 oz. Pkg. Corn bread mix
1 egg
¼ cup shredded cheddar cheese (1 ounce and this is optional)
Option: slivered green onion, and a bit more chili powder
Directions;
Option:(If you choose to do turkey, use up to one pound (or, seasoning us some diced vegetarian sausages as a season to your liking.)
Chop meat of you choice or, meatless style in a dutch over then combine the salsa beans, chili powder and 2/3 cups of water. Bring to a boil.

Dumplings;
In a medium bowl mix together corn bread mix, egg and ¼ cup water. Drop batter by large spoonfuls on boiling chili.

Cover, reduce heat and simmer for 10 to 5 minutes or until a wooden pick or, uncooked spaghetti straw can be inserted into the middle of the dumpling and comes out clean.

To serve, top chili with the cheese, green onion and some chili powder.
This serves 4 and has 11 or more depends on beans grams of fiber in each serving.
This recipe is not so semi-home made, but if you have time seems to be a good one.
