Crespelle Crepes
3 eggs
1/4 cup flour
Pinch of salt
1 cup of water
1/2 tbs. olive oil
2 tbs. melted butter
1 tbs sugar optional
Fillings:
Fresh mashed or cut up fruit, strawberries and bananas or raspberries, pears and cherries, oranges, i.e. Fresh whipped cream with a little sweetener. *If you have powdered sugar add to the top, or grated chocolate. (Add natural flavors also and puddings) Serves 4

To make Crespelle (crepes)
Sift the flour with a pinch of salt. Break eggs into a bowl and whisk. Add flour gradually, whisking all the time, until the mixture is smooth. Stir in water and mix the oil in well. Cover bowl with a damp cloth, and leave in a cool place for 30 minutes. Heat in a crepe pan or a 7-inch frying pan. Grease lightly with melted butter, and put a good tablespoon of batter in the center. Roll the pan to coat the surface evenly; Fry until crepes are brown on the underside. Loosen edge with a spatula; turn over and brown on the other side. Stack and wrap in a clean cloth until needed. (They can be frozen between wax paper)
