Many foods have a number of health benefits, while others stand above the rest as disease fighting wonders – at least in some specific departments. Celery is one of them. The food has been found to be extremely effective at killing ovarian, pancreatic, prostate, breast, liver, and lung cancer cells. In fact, in a recent study, celery killed up to 86% of cancer cells in the lungs (in vitro).

What makes celery so powerfully anti-cancerous? This nutritious, and low-calorie food seems unassuming. It is mostly water, after all, but in addition to calming your nervous system, aiding digestion, reducing inflammation, and lowering blood pressure, celery also contains an anti-cancer compound called apigenin, which has been effective at causing apoptosis (cell suicide) in numerous types of cancer cells.

Researchers in China have found that by eating just two medium stalks of celery 2 to 3 times a week can reduce the risk of getting lung cancer by an amazing 60%. It is still not definitive through the scientists research, however, if the apigenin alone does the work of killing cancerous cells or if they work in cooperation with other compounds found in celery

“Apigenin widely inhibits cell proliferation of various lung cancer cell lines in a dose-dependent manner and the combination treatment of apigenin and antitumor drugs is very effective in human lung cancer cells, and Nrf2-ARE pathway may contribute to the mechanism.”

And another study’s abstract focusing on the broader impact of fruit and vegetable intake on cancer concluded:

“In particular, high intake of Chinese cabbage (OR = 0.53), chives (OR = 0 .54), carrots (OR = 0.51) and celery (OR = 0.40) was inversely associated with lung cancer. The OR was more than six-fold elevated for smokers reporting low intake of vegetables, and more than four-fold elevated for smokers reporting low intake of fruit, as compared with never smokers reporting high intake of these items.

Conclusion: In agreement with previous studies, we found an inverse relation between vegetable and fruit intake and lung cancer risk in both strata of current and never smokers.”

Furthermore, woman who eat plenty amounts of apigenin in their diet are more likely to reduce the risk of developing breast cancer by 19%, and ovarian cancer by 20%. A study found that apigenin worked even on deadly, fast-growing breast tumors through inhibiting cell growth and suppressing the expression of a gene that is known to be associated with cancer growth. Furthermore, blood vessels which are known to fuel cancer cells were also found to shrink and receive restricted nutrient flow to the tumor — starving the ability to proliferate.

One way apigenin likely works is by reducing the possibility of cancerous tumor growth by decreasing the vascular endothelial and preventing glucose uptake – minimizing the cycle of cancer cells forming in the pancreas.

Vascular endothelial growth produces proteins that act as stimulation for the formation of new blood vessels. The unfortunate part of this protein is that is also helps the growth of cancerous tumors.

With such promising results, celery should be a new staple in your diet, and the diet of everyone you love. Just be sure to eat organic since celery is often drenched in pesticides – or you can grow your own!

Vegetarian Mincemeat Pie + Marmalade

Vegetarian Mincemeat (Green Tomatoes) This is one of my favorite because I love mincemeat pies. My mother passed on the taste to me. I loved the spices. When I grew up and found out the called for soot was fat. It fell out of favor.
Then I ran across this recipe. Same spices but you used green tomatoes. I grew tomatoes' and at the end of the season I was over-loaded. Gardeners don't like to waste. I made the recipe and handed it out for holiday gifts. My mistake was I canned it in quart jars, which made two pies. This is lighter but still heavy, and changed it next yr. to pints.
Green Tomato Mincemeat pie is so light and grandeur full of flavor with no fat. First when I first tried this recipe, it was because I had so many green tomatoes in my garden and hated to waste them at the end of the season. This recipe even it fooled me. It is an excellent recipe for a save to do again, but you won't need to because it makes up enough half pint jars for about five years. I wish someone in the family would adopt this recipe and save me a lot of time. However, one batch for a large family will last for years.


Do not give it away for Christmas and holidays because your friends are never grateful enough. lol
Your kitchen will smell heavenly. This is one of my best recipes, and a must to pass on to all vegans or vegetarians. I love this recipe so much that I don't like to share the canned pint jars of mincemeat, as give away for the holidays. Use only for presents to special friends who like mincemeat pies and its cookies.

This recipe is one you will need to stand over. You will not want to burn or scorch it it's too expensive and nutritious. One of the reasons this recipe is so great, no soot that makes it so light of a mincemeat recipe. The green tomatoes you can't tell if they are another fruit. I would love to pay extra money to purchase this green tomato recipe in the health food store. Some one should bottle this and make it up for them as a small business. The advantage of this recipe is it actually taste better than any store bought recipes in grocery stores. Which is; you can't buy receipt.
Green Tomato Mincemeat
Ø 6 lbs or 24 small green tomatoes
10-12 tart apples

Ø 1 lb. seedless raisins

Ø 4 cups brown sugar (or honey, use half as much...taste first) In England, their pies are tart

Ø 1/2 cup vinegar

Ø 1 tsp. salt

Ø 2 tsp. powdered cinnamon

Ø 1 tsp. ground nutmeg

Ø 1 tsp. powdered cloves,

Ø 1/2 tsp. powdered ginger

Ø 1 orange

1 lemon

Directions: Core tomatoes and apples, (don't peel) and cut through coarse blade of food chopper. (Or cut very small pieces). Combine raisins, sugar and spices with vinegar in a large open kettle and add apples with raisins. Cook over low heat about 2 hours (here's the hard part) stirring constantly, or it will scorch. Quarter lemon and orange, leaving peels on, remove seeds, run through fine blade of chopper, and add to mincemeat stirring well. To freeze, cool well and place in pint containers.

To can, fill pint jars to within 1/2" of top and process 30 minutes in boiling water bath. Makes 10 pints. (1 pint makes a pie)


Green Tomato Marmalade:

The spice and even the orange is known for it's anti micro toxins abilities so let's use it more in getting rid of fungi's.

GREEN TOMATO Marmalade:'' Twenty-Four medium green tomatoes 4 oranges 3 1/2 sugar will make a new and delicious marmalade. You can use Sure Jell, Certo or M.C.P. and follow the directions for marmalade by substituting the green tomato for the grapefruit.'' (I add only enough sugar to make it a nice sweet, remember to began to cut back on sugars, each time using the recipe till you get just the right combination for your family.) Note: Be sure the all the fruit and vegetables are organically grown in a local garden if possible.

FRIED GREEN TOMATOES BLT

Fried Green Tomatoes
1 cup mayonnaise
1/4 cup sliced green onions
2 tablespoons Dijon mustard
1 tablespoon chopped fresh parsley
1 tablespoon minced fresh garlic
1 teaspoon horseradish
For the Remoulade sauce, stir together mayonnaise, green onions, Creole mustard, parsley, garlic, horseradish and salt; cover and chill until ready to serve.

4 green tomatoes
1 cup plain flour, seasoned with salt and pepper
1-2 eggs, slightly beaten
Vegetable oil, for frying


For the fried green tomatoes, rinse and cut green tomatoes into very thin slices.
Dredge with flour, dip in egg and dredge with flour again.
Heat oil in large skillet over medium heat.
Drop dredged tomatoes into hot oil and fry again until lightly browned.
Remove from oil; place on paper towels for excess oil. Salt immediately.


Large buns
Shredded lettuce
Cooked bacon
Avocado slices
Salt, to taste


Cut the buns in half. Spread with Sauce. Layer with lettuce, Fried Green Tomatoes, bacon OR VEGGIE BACON and avocado.

Battered Fried Veggies



I love flour battered vegetables. This one is easy. I did not do the meat, only the veggies. This was on the Rachel's TV show. Below is the link to that show. She did not do the meats on the first part of the video.


INGREDIENTS


Oil for frying, such as canola, vegetable or an olive oil/vegetable blend


2 1/2 cups flour, divided


Salt and pepper


6 large eggs, divided


1 1/2 cups breadcrumbs


1/2 cup, a couple of handfuls, grated Parmigiano-Reggiano


3 pieces (1 1/4 pounds) boneless, skinless chicken breast, tenderloin removed


1 pork tenderloin (about 3/4 pound), trimmed of silver skin


3/4 pound veal medallions/scallops


1/4 teaspoon freshly grated nutmeg


1 cup seltzer water


1 pound butternut squash, peeled and sliced 1/2-inch thick


3 potatoes, peeled and halved lengthwise then sliced 1/2-inch thick


3/4 pound cremini/portabella, fresh porcini or trumpet mushrooms, cut into


chunks


1/4 pound large spinach leaves


20 large sage leaves


1 cup large sprigs flat-leaf parsley


Lemon wedges and flaky sea salt, to serve


PREPARATION




Fill a tabletop fryer or deep Dutch oven with oil. If using a Dutch oven, fill 1


1/2 to 2 inches deep and heat over medium to medium-high heat. For tabletop


fryers, preheat oil to 365°F.


Set up a breading station for meat: In separate shallow dishes, place 1 cup


flour seasoned with salt and pepper, 4 eggs beaten and seasoned with salt and


pepper, and breadcrumbs mixed with grated cheese.


Preheat oven to 250°F. Arrange a metal rack inserted into large baking sheet.


Slice the chicken and pork on a bias into thin medallions. Season chicken, pork


and veal pieces with salt and pepper. Bread meats in flour, egg then


breadcrumbs, and fry in small batches to deep golden on both sides, about 3-4


minutes. Transfer to a baking sheet and keep warm in a low oven.


Place remaining 1 1/2 cups flour in a bowl and season with salt, pepper and


nutmeg. Whisk in 2 eggs and seltzer to form a batter. Dip and fry butternut


squash, potatoes and mushrooms in small batches. Drain on parchment or a paper


towel-lined platter and sprinkle with flaky sea salt while hot. Dip and


flash-fry the spinach then the herbs; they will cook very quickly.


Serve fried meats and vegetables, spinach and herbs on a platter with lemon


wedges for dousing.

SIMPLE #EGG PLANT DIP



Ingredients
2-3 large eggplants
1 medium-size onion chopped finely
2 tablespoons canola (or olive) oil
2-3 tablespoons mayonnaise (optional)
Salt (to taste)
Slivers of roasted red pepper and Greek olives for decoration


Directions
Prick the eggplant with a fork. Roast on the grill or broil in the oven until the skin looks charred (about 45 minutes to an hour). Remove from grill/oven, cool off. Peel off the blackened skin, and let the eggplant sit in a non-metal sieve for at least half an hour to drain.
Method 1: Put the eggplant through the food processor with a plastic blade, running it intermittently no longer than a minute.
Method 2: "Chop" the cooked eggplant with a wooden spoon until it no longer looks/feels stringy.
In a small bowl, place the eggplant; start adding the olive oil slowly while mixing continuously. Add the chopped onion once all the oil is incorporated in the eggplant mixture. Add the mayonnaise, if desired. Salt to taste. Level it off with the wooden spoon or a spatula; decorate with slivers of roasted red peppers and olives. Serve on French bread (or any other kind of hard-crust bread or pita bread). 


Tips/Techniques
Partial preparation: the eggplant may be roasted/broiled a day in advance, peeled and let sit in the sieve to drain in the refrigerator overnight.

BAKED VEG. ARTICHOKE DIP

THIS WAS ON PBS VICTORY GARDEN.  I LOVE VEGGIE DIPS. WE CAN USE SOUR CREAM, another soft cheese, avocado, mashed potatoes etc. INSTEAD OF GOAT CHEESE, if it's out of your budget unfortunately it is mine. Instead of Artichoke; bake 2 small eggplants, remove most of the seeds, scoop it out of the shell and blend. Then use this recipe. Buy or make your own pesto or add in salsa and basil.

Baked Artichoke, Goat Cheese-Pesto Dip

Ingredients

  • 2 cups Fresh Basil Leaves
  • 1/3 cup Toasted Walnuts
  • 1/2 cup Parmesan Cheese
  • 1 teaspoon Black Pepper
  • 1 teaspoon Kosher Salt
  • 1 cup Extra Virgin Olive Oil
  • 1 lb. Goat Cheese
  • 1 lb. Neufchatel cream cheese (or, sub. cottage cheese)
  • 1 cup Pesto
  • 1 cup half-n-half
  • 2 lbs. Artichoke Hearts Quartered

Directions

  1. Combine basil leaves, walnuts, parmesan cheese, black pepper, salt, and olive oil in a food processor and blend until smooth to make the "pesto" referenced in the fourth step.
  2. Soften goat cheese and neufchatel cheese to room temperature.
  3. Put goat cheese and neufchatel in a food processor and blend until smooth, no lumps.
  4. Add pesto, half-n-half, artichoke hearts and pulse until combined evenly.
  5. Season with salt and pepper to taste as necessary.
  6. Pour into an oven-proof casserole dish and top with grated parmesan cheese.
  7. Bake at 350° F for 10-12 minutes or until top becomes golden brown.
  8. Serve with olive oil crostini or your favorite crispy bread or crackers.

PUMPKIN PIE BARS + Vegan Cookies


Pumpkin Pie Bars

1 can refrigerated crescent rolls
2 eggs
15 ounces can pumpkin puree
1 cup whipping cream
1/2 cup brown sugar, packed
1/4 cup corn syrup;  honey or agave
1 tablespoon pumpkin pie spice
1/2 teaspoon salt
Serve with prepared whipped cream and a sprinkle of cinnamon and sugar.

Preheat oven to 350 degrees. Line a 11 x 7 pan with parchment paper making sure to leave a little hanging over the edges. (I didn't have a 11 x 7 so I did use a 9 x 13.)

Unroll crescent roll dough and press into the bottom and sides of the lined pan. Set aside.

In the bowl of a stand mixer, mix together the eggs, pumpkin, whipping cream, brown sugar, corn syrup, pumpkin pie spice, and salt until smooth. Pour mixture over dough.

Bake for 45 - 50 minutes or until knife inserted comes out clean and center is set. Let bars cool for a couple hours and then refrigerate to chill.

Using the parchment paper to lift the chilled bars from the pan. Slice into bars, top with whipped cream, sprinkle with a little cinnamon sugar and serve!

Ridiculously Good Pumpkin Spice Cookies,




Not only are these pumpkin cookies delicious, but this fabulous recipe will have you eating tons of pumpkins and squash long before the traditional Thanksgiving pumpkin pies. Oh yeah, they're also vegan (if you must have your eggs, add two liquid chickens eggs instead of the egg replacer).

Ridiculously Good Pumpkin Spice Cookies

Preheat oven to 325°F
Ingredients (all organic, yes?) (Freeze some of the batter for Thanksgiving day or the dough and make them fresh)
  • 1 cup cooked pumpkin (cut in half, scoop out seeds, place cut side down on baking sheet and bake at 350 until soft. Peel and mash or blend the pumpkin.)
  • 1/2 cup coconut oil (or butter, or even olive oil)
  • 3/4 cup unrefined sugar (or sub. maple syrup or honey etc. just taste the batter for desired sweetness)
  • Egg replacer equivalent for 2 eggs
  • 2 cups whole wheat flour (use coconut flour i.e)
  • 2 tsp baking powder
  • 1/4 tsp sea salt
  • 1/4 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/2 cup chopped walnuts
Mix all of the ingredients together, adjust spices to your taste, and chill in the refrigerator for 1 hour. Drop by the spoonful onto greased cookie sheets and bake for 8 to 10 minutes.
Try substituting sweet potatoes or butternut squash (or any winter squash) for the pumpkin for a different taste, put them in muffin tins, or bake in a loaf pan.
They're incredibly tasty (ridiculously good, even), and you can eat all you want, because they're made from vegetables!
[Actually, you can't eat all you want, because of course you'll need to share some with the wife and kids, right? And anything you read on this blog is purely conjecture, so don't tell your doctor I said you could eat all you want.]

25 Best Ways to Detox From Heavy Metals, Pesticides, Environmental Pollutants, and Metabolic Waste

If you are endlessly tired, irritable, have trouble losing weight, or feel depressed, you might be suffering from the environmental onslaught of toxins being poured into our air, water and soil by greedy corporate monopolies. If you aren’t sure whether you are suffering from toxic overload, you can at least be certain you are not immune to the toxic effects of environmental pollution like oil spills, fracking, chemtrails, nuclear energy (think Fukushima), or even the domestic production of war materials. Even every day items like shampoo and rug cleaners also contain thousands of chemicals that are deadly toxic in higher dosages.


From concern about BPAs to heavy metals, pesticide residues and GMO foods, its time to take an offensive, instead of defensive, view of our health. Here are more than two dozen ways to purify the body from these ill-imagined pollutants:


1. Support the liver and gallbladder with  organic beetroot. Organic beets are a valuable source of iron, magnesium, zinc and calcium which all support healthy detoxification and better elimination. They are also full of B3, B6, C, and beta-catoene, important nutrients for supporting the liver and gallbladder in making bile acids which support detox.


2. Drink more purified water. Water is one of the most vital ways of self-purification on the planet. It helps every single cell get rid of waste and allows us to excrete toxins through our urine and bowels, as well as through our skin via sweat. (Reverse Osmosis) Distilled water too will work well here.


3. Bathe in Kaolin clay or use acalcium montmorillonite clay as they are considered the best for removing pesticides from the body.


4. Reduce your meat and dairy intake since these animals are often fed antibiotic in their diets. (grass-fed is better)


5. Consume more pantethine, a biologically active form of the B5 vitamin, which can help open blockages created by pesticide consumption. When we are too clogged with pesticides our bodies cannot naturally detoxify themselves.


6. Use activated charcoal. It is very safe to consume up to 20-30 grams a day mixed with purified water. 9. Eat more fiber. 20. Consume Essiac Tea, which cleanses the body and also has anti-cancer properties. This tea can help the body rid itself of pesticides used with GMOs, and ground-spraying including permethrin.


21. Eat your sea vegetables. Algin in seaweeds helps to absorb toxins form the digestive tract (in much the same way that water softener removes hardness from tap water) so they can be eliminated more easily. They also offer the largest range of vital trace minerals that can help to clean the blood. (Don't take this if your allergic to iodine or fish)

I never told my children because they would have actually left me. Their father had money, and with it refused to pay any child support. It was a game he played to force me back and, later after he got married, them back.
My poverty was not just at this time period. When my migrant workers parents followed the crops we resorted to dumps where farmers would dump loads of old sweet potatoes, potatoes or onions that was in dirt when the fields were gleaned for winter.
I am for the single parents who have to make do and we could make it easier for them. The store owner boxed up the produce (for chickens) and left them beside the dumpster. If they where not gone that day he chucked them inside the next day.

Hundreds of poor people waiting outside of a closed grocery store for the possibility of getting the remaining food is not the picture of the “American Dream.” Yet on March 23, outside the Laney Walker Supermarket in Augusta, Ga., that is exactly what happened.
Residents filled the parking lot with bags and baskets hoping to get some of the baby food, canned goods, noodles and other non-perishables. But a local church never came to pick up the food, as the store owner prior to the eviction said they had arranged. By the time the people showed up for the food, what was left inside the premises—as with any eviction—came into the ownership of the property holder, SunTrust Bank.


The bank ordered the food to be loaded into dumpsters and hauled to a landfill instead of distributed. The people that gathered had to be restrained by police as they saw perfectly good food destroyed. Local Sheriff Richard Roundtree told the news “a potential for a riot was extremely high.”

“People got children out here that are hungry, thirsty,” local resident Robertstine Lambert told Fox54 in Augusta. “Why throw it away when you could be issuing it out?”

SunTrust bank is trying to confuse the issue and not take direct responsibility for their actions. Their media relations officer Mike McCoy, stated, “We are working with store suppliers as well as law enforcement to dispose of the remaining contents of the store and secure the building.” Yet he also said that the food never belonged to SunTrust Bank.



There is no need to sugar coat what happened. Teresa Russell, chief deputy of the Marshal’s Office in Richmond County, said the owner of the building ordered that the food be taken to the landfill. Some people even followed the truck to the landfill and were still turned away.

In Richmond County, there are about 20 evictions per day, and the area surrounding the supermarket is one of the poorest in the state. According to the last available data, the poverty rate is 41 percent. Many people in that parking lot probably knew all too well how evictions work, and were in desperate need of the food assistance.

This story is not some bizarre exception. It reeks of the truth of capitalism and is strikingly similar to the H&;M scandal that broke in 2010 when clothes were being shredded before being thrown away, so as to make sure the value of the merchandise was unaffected.

In a capitalist society, the motive behind the production of food is not to feed people, housing is not made to give them shelter, clothing is not made to keep them warm, and health care is not offered primarily to keep people healthy. All of these things, which are and should be viewed as basic rights, are nothing other than commodities—to be bought and sold—from which to make a profit. If a profit cannot be made, usually due to overproduction in relation to the market, the commodity is considered useless by the capitalist and destroyed.
In this case, it appears the bank simply did not care. For the banks that have made their profits through evictions and foreclosures, it is little surprise that they showed no remorse in leaving people staring in disbelief, with empty bags, as they watched the food that could be feeding their families dumped into a landfill instead.
