
Ingredients:
1 1/2 cups granulated sugar
1/2 cup water
1/8 cream of tartar
2 egg whites
1/2- 1 teaspoon vanilla extract or other flavorings
1. Combine sugar, and cream of tartar in
saucepan. Cook slowly until syrup reaches the soft ball stage )2:38
F) While is cooking beat egg whites until the form soft peaks. Pour
1/2 the syrup in a fine stream, over egg whites beating constantly
during addition.
2. Beat at medium speed while syrup cooks
to the firm ball stage (244 F). Pour 1/2 the remaining syrup in a
fine stream over egg white mixture, beating constantly.
3. Beat at medium speed white last of the
syrup when reaches the hard ball stage (250F.) Pour last of syrup in
a fine stream over egg white mixture beating constantly.
Continue beating until frosting is
desired spreading consistency. Yields: Frosts 2 Layer 8-inch cakes.
