Old traditional way to use up those big zucchini that you find in your garden.
Ingredients

4 cups shredded zucchini
4 egg yolks
1/2 cup flour
1t salt (or to taste)
1-2 cups shredded cheese
4 egg whites (beaten till stiff)
Directions
Mix zucchini, yolks, flour with salt and shredded cheese. Fold in beaten stiff egg whites. (if egg whites don't stiffen add them anyway but add an additional 1/2 cup flour to get desired consistency. Pan fry in your favorite lard, or butter or bacon/sausage fat.
