CHILI BEAN & CHIP CASSEROLE

Chili Bean Casserole
A very quick and simple dish. I use all my old corn chip up with a can of medium Chili Beans made into this Chip Casserole that gives your family more legumes (fiber) in a delightful way.
White Tortes Chips
Can Chili Beans Cheese (grated)
Tomato (diced)
Onions (chopped) or green onion
Diced Avocado
Sour Cream
In small baking dish spray pan with oil and crumble enough tortes chip to cover bottom of pan with chip. Pour can of water and can chili beans and onions over tortes chip evenly.
Top with a layer of cheese and bake till bubbly.
Let cool, and top with tomato, avocado.
A side dish or topped with green onions before serving. This can be in a side dish or on top of dish.
Salsa can be added to this dish especially if no fresh tomatoes are available. One chopped Fresh corn when in seasons add to the variety of this casserole. This is one of my basic dishes.
